Rice Pilaf
There are 100s of versions of pilaf and this is one of the more basic ones. It is perfect as it is but can easily be elevated with dried fruit, nuts and other spices. It’s a great side to grilled or braised meat or vegetables.
Ingredients
- 55g butter
- 1 brown onion, finely diced
- 280g basmati rice
- 820ml chicken stock
- 2 bay leaf
- 2 garlic cloves, crushed
- 30g butter
Method
1. Heat the stock in a saucepan.
2. In a shallow pan you have the lid for, add the butter on medium heat, then add the onions season with salt and saute for 3-4 minutes.
3. Add the rice (no not washed, uncle roger fans come at me) and stir through the onions.
4. Once the onions are stirred through the rice well, add the hot stock and mix. Then, add the bay leaves and crushed garlic cloves.
5. Turn the heat to low and stir well, cover with the lid and leave to cook on low heat for 30 minutes.
6. After 30 minutes, remove the lid and fluff the rice with a fork and add the last 30g of butter.

????Basmati Rice Pilaf In The Oven This simple easy Rice Recipe presents endless possibilities for changing the flavour - with different spices and dried fruit additions.
Ingredients:
375 mL (1½ cups) basmati rice
45 mL (3 Tbsp) butter
1 onion, chopped fine
1 bell pepper, chopped fine
2 celery ribs, chopped fine
2 bay leaves
2 mL (½ tsp) cumin
2 mL (½ tsp) ground turmeric
2 mL (½ tsp) cinnamon
2 cloves garlic, minced
560 mL (2¼ cups) chicken stock
Salt & pepper to taste
125 mL (½ cup) currants
125 mL (½ cup) peas, fresh or frozen
60 mL (¼ cup) pine nuts or pistachios

Method:
Preheat the oven to 180ºC (350ºF).
Melt the butter in a 3-quart braiser over medium heat.
Stir in the onion, bell pepper, and celery; and saute until the onion is translucent.
Add cumin, turmeric, cinnamon, and garlic to sautéed vegetables and cook until fragrant.
Add rice, and cook, stirring constantly, for about 1-2 minutes.
Add chicken stock, bay leaves, peas, and currants.
Bring to a boil.
Cover and transfer the braiser to the oven and bake 15 minutes.
Remove and rest at room temperature for 15 more minutes without opening the lid.
Remove bay leaves, stir and sprinkle on the pine nuts.

Healthy Rice Pilaf
This is such an easy yet delicious side dish that goes with practically everything! You can add veggies to it as well, such as peas or chopped broccoli. I love cooking my rice pilaf in the Kettle & Fire Chicken Broth & seasoning it with some Dan-O’s to keep the sodium low! You can find both at your local Kroger ????
INGREDIENTS:
1 1/2 tbsp butter
½ cup orzo
½ cup jasmine rice or rice of choice
1/2 small yellow onion, diced
2 cups of Kettle & Fire Chicken Broth @kettleandfire

INSTRUCTIONS:
In a large deep skillet, melt the butter and add the orzo & rice. Cook until golden brown. Add the onion & garlic. Cook until transparent. Add the chicken broth, bring to a boil and then simmer, covered, for 15-20 minutes. Turn off the heat, fluff it up, and enjoy!
One serving is 1/3 cup of cooked rice pilaf

Serves 4-5
2 cup long-grain basmati rice
1 tsp cumin seeds
2 cinnamon sticks
2 bay leaves
6-7 black peppercorns
5 cloves
3 1/2 cup warm water
2 tbsp ghee/vegetable oil
1/2 fresh lemon juice
salt to taste
Cooking Instructions
Heat up a wide pan and add ghee or vegetable oil on a medium flame.
Add cumin seeds and when pop, add rest of the spices, fry them for 1 minute until they get aromatic.
Add thinly sliced onions and brown them.
Add thawed green peas or fresh peas. Optionally you can add chopped vegetables of your choice. Cook them for 2-3 minutes.
Drain the rice and add into the pan and toast for 2 minutes.
Pour in water and let boil.
Now add salt and lemon juice and stir.
Cover with a lid and put the flame down to the lowest setting. Cook for 10 minutes.
Switch the flame off and let the pan sit for another 7-8 minutes covered.
Now your pilau rice should be ready. Enjoy!!
