How To make Rhubarb Strawberry Fruit Leather
1 1/2 tb Honey, unless you use frozen
-strawberries with Rhubarb-Strawberry Fruit Leather Combine 1 cup rhubarb puree and 1 cup strawberry puree (Strawberries may be fresh, frozen or frozen with sugar added.) Add sugar already added. Spread on plastic wrap and dry as for fruit leather.

Ingredients
2 Cups of Berries or fruit of your choice
Sweetener - optional
Instructions
Wash and clean the strawberries or berries you are going to use. You can mix them, use separate types or decorate them as in my video.
Add strawberries into the magic bullet cup or a blender and puree the fruit thoroughly.
If you are using a dehydrator with a round shape, you might need a plastic insert that goes inside each of the dehydrator layers.
Pour the fruit mixture onto the plastic or parchment paper and use an offset spatula to help spread the puree into quarter inch thick layer.
If you want to make it more decorative, look at the video, where I have used a bit of blueberry mixture. I filled that mixture into a syringe and gently pressed small dots on a strawberry layer.
This step is optional, but I have added this as well, in case you want to go more into decorating. As you see in the video, I have further made little star-like streaks out of the dots with a thin metal stick.
Once all the layers are poured and spread, place them one by one on top of each other onto your dehydrator. Switch the dehydrator on for approximately eight hours. Swapping the layers from time to time is advisable so each rack will get fully dehydrated.
When your fruit roll-ups are fully dehydrated, let them cool completely. To check, touch each fruit roll with your bare hands and ensure they are no longer sticky. Gently peel the fruit leather from either plastic, parchment paper or a silicone sheet.
The final step is to pre-cut your fruit skin. You can either roll the whole sheet and, using your scissors, cut it into the desired size.
Notes
Lemon juice - if you use blueberries or blackberries, a few drops of lemon juice will add a nice flavor.
Thickness – do not try to make them extremely thin – dehydrator will dehydrate all the water from the fruit roll-ups, and the sheet will be fragile at the end.
Ready – once the sheets are not sticky anymore to the touch, the roll-ups are fully dry
If it is too dry – spray a bit of water.

What To Do If Your Fruit Leather Is Too Dry
You whipped up a batch of fruit leather and put it in the dehydrator. For some reason, when you pull it out, you find it's just too dry, crispy and breaks apart rather than rolls in a nice fruit roll up. This brief little video offers the perfect no fuss solution.
Homemade Backpacking snacks - Strawberry Rhubarb fruit leather
I just love love love strawberries and rhubarb together, and whenever I can, I buy up a bunch and put that shit on everything! Here I made some fruit/vegetable leather in my dehydrator and I'll take these (if they survive that long!) on some hikes and backpacking trips I hope to have coming up.
6 stalks of rhubarb
1 pint strawberries
1/2 cup (125ml) water
1/2 cup apple sauce
1/4 cup (60ml) maple syrup
2 tbsp gelatin powder
cut the rhubarb and strawberries into small bits, and put them in a saucepan over medium heat with the other ingredients. Stir occaisionally so that it doesn't burn and stick. This will only take 10 to 15 minutes until it's all broken down and mushy.
Let it cool completely before putting on the dehydrator tray. Spready it evenly onto parchment covered tray(s) and dehydrate at 145F/63C for 2.5 hours, then turn down to 135F/57C for ~6 hours. Once it is dehydrated, tear into strips and wrap in parchment so it doesn't stick together. I've stored mine in the freezer until I will be hitting the trails.

Bring chopped rhubarb to a boil.
Turn off heat and let sit for an hour or until soft.
Drain and transfer to blender.
Add 1 tablespoon honey or fruit jam per 2 cups rhubarb to sweeten.
Blend to a pure.
Place in dehydrator 1/4 inch thick on parchment paper at 130deg F.
Check in 4 hours.

On the homestead we make every year about 500-600 1 inch fruit roll ups or as we say fruit leather and we like to make different flavors like Raspberry, Strawberry, Juneberry, Apple and we use for them a zucchini base often in our recipe, this can help get us more volume and we like it. Takes little effort to get the dehydration correct due to ones dehydrator but once you get the feel of the leather it can be great savings for the farmstead family for sure.
