How To make Pocket Pork Chops
2 tb Defatted chicken stock
1/4 c Finely chopped onion
1/4 c Chopped mushrooms
1/2 ea Small apple, peeled and
Chopped 1 tb Raisins
1/2 sl Whole wheat bread, crumbled
1 tb Chopped parsley
1 ds Each salt & pepper
1/4 ts Italian herbs
2 ea 1 inch thick pork loin chops
1/2 c Unsweetened applesauce
Boiling water 1. Preheat oven to 350 degrees f. 2. In small skillet heat chicken stock
and saute onion, mushrooms and apples until translucent. 3. In a small bowl or cup pour boiling water over raisins Set aside a few minutes until raisins are "plumped." Drain. 4. Stir in raisins, bread crumbs, parsley and seasonings into mixture in skillet. 5. Cut a deep pocket in each pork chop. Fill with stuffing and secure with wooden picks. 6. In skillet coated with non-stick spray, brown chops quickly on both sides. 7. Place chops side by side in small baking dish. Pour in a little water (just enough to cover bottom of dish.) 8. Cover and bake 35 to 45 minutes, or until done. 9. Serve chops with applesauce.
To complete menu: Steam and mash 1 1/2 small potatoes and 1/2 cup sliced green beans. NOTE: To make your own applesauce, just peel, core and slice an apple and cook in 2 Tablespoons of water with a dash each of cinnamon and cloves. Mash apple when tender, and VIOLA! instant apple sauce. Stuffed Pork Chops
Stuffed pork chops are easy and delicious. You can make homemade stuffing from scratch or use Stovetop cornbread stuffing. As I have mentioned in other recipes, the outcome of the dish depends on the cut of meat used. It is always best to consult a butcher to get the perfect cut of meat.
2 -- 3 pork chops about 1 inch thick
3 cloves of garlic or garlic powder
Rosemary, fresh or powdered
homemade stuffing or Stovetop cornbread stuffing
Salt
Pepper
Olive oil

Ingredients:
3 bacon strips, diced
¼ cup white onions, chopped
½ cup cornbread stuffing mix
½ cup peeled tart apple, chopped
2 tbsp pecans, chopped
2 tbsp raisins
¾ cup chicken broth
¼ tsp rubbed sage
¼ tsp ground allspice
2 bone-in, skinless pork loin chops, 1 inch thick
1 tbsp butter
1 tbsp vegetable oil
To Serve:
apple sauce
For Garnish:
1 sprig rosemary
⬇️ How to make Pressure Cooker Stuffed Pork Chops ⬇️
0:11 In a pressure cooker, cook the bacon and onion over medium heat until the bacon is cooked. Set aside.
0:27 In a small bowl, combine the bacon mixture, stuffing mix, apple, pecans, raisins, 2 tbsp broth, sage, and allspice. Set aside.
1:01 Cut a pocket in each pork chop by slicing almost to the bone then fill with stuffing.
1:16 In the pressure cooker, brown pork chops one at a time in butter and oil on both sides; sprinkle salt and pepper to taste.
1:37 Add the broth and close cover securely; place pressure regulator on vent pipe.
1:45 Bring cooker to full pressure over high heat for 5 minutes.
1:49 Reduce heat to medium-high and cook for 10 minutes. The pressure regulator should maintain a slow steady rocking motion; adjust heat if needed.
2:00 Remove the pressure cooker from the heat and let it cool first before opening.
2:15 Serve with apple sauce.
