How To make Pepper Corn Pasta
3/4 c Durum semolina
1/4 c Cornmeal
1/4 ts Black pepper, coarsley
Ground 1/3 ts Crushed red pepper
1/3 ts Dried oregano
OR 1 ts Fresh oregano, chopped
1 cl Garlic, minced
1 Egg
2 tb Water, if and as needed
1 c Durum semolina
1/4 c Cornmeal
1/3 ts Black pepper, coarsely

2 tb Water, if and as needed

CREAMY PEPPERCORN SAUCE | Serves 4
????INGREDIENTS????
- 1 tbsp Black Peppercorns, crushed
- 1 cup / 250ml Double Cream
- 1/2 cup / 125ml Beef Stock
- 2 small Shallots, finely diced
- 1 clove of Garlic, finely diced
- 1 tbsp of Butter
- 1 tsp of Worcestershire Sauce
- Salt, to taste
????METHOD????
- If you're frying steak, chicken, mushroom etc leave the juices in the pan. This will add a huge amount of flavour to the peppercorn sauce.
- Melt your butter over medium heat and deglaze the pan if necessary. Fry your shallots until fragrant and translucent. (2-3mins)
- Add in your garlic and peppercorns and fry for a minute or so until the garlic just begins to brown.
- Pour in your Worcestershire sauce and beef stock, then stir in your cream.
- Add salt to taste.
- Reduce to a simmer until the sauce thickens enough to coat the back of a spoon. (8-10mins).
*1 tbsp of peppercorn will add a good kick of spice. For less spice start with 1 tsp and adjust accordingly.

Ingredients
- 3 shallots, sliced thin
- 3 cloves garlic, smashed
- 20g green peppercorns
- 50ml brandy or whiskey
- 10g ground black pepper
- 500ml beef stock
- 50ml cream
- Salt to taste
- 20ml olive oil
- Small bunch parsley
Method
1. Start by sautéing your shallots for 5-6 minutes or until they become translucent.
2. Add the garlic and cook for a further 1 minute.
3. Deglaze the pan with the brandy and add the green peppercorns, ground black pepper and beef stock to the pan.
4. Reduce this by half and stir in the cream.
5. Check the sauce for salt and finish with some fresh chopped parsley.
6. Enjoy it over your favourite steak, cooked to how you like it.

INGREDIENTS...1 serving
1 med chicken breast cut into medallions
1/3 cup dry sherry
1/3 cup heavy whipping cream
25 twists fresh black pepper
1 TBSP butter
dash salt
RECIPE
1. Brown the chicken in med high pan with butter.
2. Add dash salt and 25 twists fresh black pepper.
3. Add 1/3 cup dry sherry, reduce by half.
4. Add 1/3 cup heavy cream, reduce by1/3 of until saue begin to reduce.
5. Prepare al pasta dente.
6. Coat your portion of pasta with sauce.
7. Plate and enjoy
