Peanut Butter Balls With Crunchy Buckwheat | Low Sugar Sweets
Quick and easy peanut butter balls that are so crunchy, delicious and they are even a healthy snack as they are low in sugar.

INGREDIENTS: 22 balls
Dough
7 tbsp peanut butter
12 tbsp sprouted buckwheat
Chocolate
1 dl of melted cacao butter, about 3 medium sized chunks of cacao butter
3 tbsp of raw cacao
1 tbsp of maple syrup
1 1/2 tsp. of coconut butter
A pinch of salt
APPROACH
1. Blend the peanut butter and buckwheat and put in freezer for an hour to stiffen so it is easier to make balls.
2. While waiting melt cacao butter and blend in cacao powder, coconut oil, salt and maple syrup.
3. Make balls, put in freezer for 10 minutes so the chocolate stiffen immediately.
4. Dip the balls in chocolate and store in freezer. Obs! Peanut butter gets a little runny inside if kept in room temp. for a while.
They taste amazing right out of the freezer!

Ingredients
* 1/2 cup (120 g) creamy peanut butter (with no added ingredients, only peanuts, and maybe salt!)
* 1/3 cup (80 g) maple syrup or agave syrup
* 3/4 cup (95 g) fine oat flour (just grind rolled oats in a coffee/spice grinder)
optional
* 1 tsp vanilla extract
* 1/4 tsp salt
Instructions
* Preheat your oven to 350F (180 C) while you prepare the cookies
* In a large bowl, add oat flour, peanut butter and maple syrup. Stir with spatula until combined and smooth, a dough should form that pulls away from the sides of the bowls, and be workable with your hands.
* Scoop 1 tsp sized balls of dough, and use 2 to create a peanut shape. Press down onto lined baking sheet, making sure two pieces are connected and score with a fork to create a hatch pattern if desired.
* Bake for 9 – 12 minutes, or until lightly golden brown and allow to cool fully. Cookies will firm up significantly once cooled, so don’t be alarmed if they seem softer at first. Mine were done at exactly 10 minutes.
* If desired, sandwich a spoonful of peanut butter or melted chocolate between two cookies. Enjoy!

✅HEALTHY GRANOLA BARS INGREDIENTS:
➤2 c old-fashioned rolled oats
➤3/4 c roughly chopped nuts like almonds, walnuts, pecans, peanuts or a mix
➤1/4 c sunflower seeds or pepitas or additional chopped nuts
➤1/4 c unsweetened coconut flakes
➤1/2 c honey
➤1/3 c creamy peanut butter
➤2 tsp pure vanilla extract
➤1/2 tsp ground cinnamon
➤1/4 tsp kosher salt
➤1/3 c mini chocolate chips or dried fruit or nuts
✅HEALTHY GRANOLA BARS DIRECTIONS:
1. Place a rack in the center of your oven and preheat the oven to 325 degrees F. Line an 8- or 9-inch square baking dish with parchment paper so that two sides of the paper overhang the sides like handles. Coat generously with nonstick spray.
2. Spread the oats, nuts, sunflower seeds, and coconut flakes on a rimmed, ungreased baking sheet. Toast in the oven until the coconut looks lightly golden and the nuts are toasted and fragrant, about 10 minutes, stirring once halfway through. Reduce the oven temperature to 300 degrees F.
3. Meanwhile, heat the honey and peanut butter together in a medium saucepan over medium heat. Stir until the mixture is smoothly combined. Remove from the heat. Stir in the vanilla, cinnamon, and salt.
4. As soon as the oat mixture is finished toasting, carefully transfer it to the pan with the peanut butter. With a rubber spatula, stir to combine. Let cool for 5 minutes, then add the chocolate chips (if you add the chocolate chips immediately, they will melt).
5. Scoop the batter into the prepared pan. With the back of a spatula, press the bars into a single layer (you also can place a sheet of plastic wrap against the surface to deter sticking, then use your fingers; discard the plastic prior to baking).
6. Bake the healthy granola bars for 15 to 20 minutes: 20 minutes will yield crunchier bars; at 15 they will be slightly chewier. With the bars still in the pan, press a knife down into the pan to cut into bars of your desired size (be sure to pick a knife that will not damage your pan—I typically cut into 2 rows of 5). Do not remove the bars. Let them cool completely in the pan.
7. Once the bars have cooled completely, use the parchment to lift them onto a cutting board. Use a sharp knife to cut the bars again in the same place, going over your lines to separate. Pull apart and enjoy!

Gluten, Lactose and Yeast Free Peanut Butter Crunchies (Magazine Recipe) - #bakingwithvickiie

Today I am showing you how to make Making Baking Special Magazine's Peanut Butter Crunchies. But of course, it is going to be gluten free, lactose free and yeast free.

Recipe
Equipment:
Scales
Baking Trays/Cookie Sheets x 2
Baking Paper
Pen/Pencil
Scissors
Spray Oil
Large Mixing Bowl
Wooden Spoon/Electric Hand Whisk
Spatula
Teaspoons x 2
Cooling Rack
Ingredients:
25g Smooth Peanut Butter
25g Butter, softened (I like to use lacto free butter)
25g Caster Sugar
25g Light Brown Muscovado Sugar
Half a Medium Egg, beaten
50g Gluten Free Self Raising Flour
Method:
First things first, measure out all of your ingredients and preheat your oven to 180C/160C Fan/Gas Mark 4
Line your baking trays/cookie sheets using your baking paper, pen/pencil, scissors and your spray oil.
Now that you have done all that prep-work, grab your wooden spoon/electric hand whisk, your mixing bowl, your spatula, your peanut butter, butter, caster sugar and your light brown muscovado sugar.
Place your peanut butter, butter, and both sugars into your mixing bowl and mix together until well combined.
Now, grab your egg.
Add your egg to you mixing bowl and, again, mix together until you have a nice and smooth mixture.
Then, grab your flour.
Add all of your flour to your mixture and mix until fully combined.
After that, grab your teaspoons and your prepared baking trays/cookie sheets.
Using your teaspoons, make small balls of your mixture and place your these onto your prepared cookie sheets or baking trays well spaced apart as they spread out when in the oven.
Place into your preheated oven for 15 minutes.
After this time, grab your cooling rack and place your crunchies onto it, still on their baking trays/cookie sheets to cool completely.
Serve and enjoy!
