How To make Pad Thai (3)
16 oz Chantaboon rice sticks
- medium thread (See note) 1 tb Vegetable oil
6 Eggs; beaten
1/4 c Vegetable oil
8 Garlic gloves
1 lb Pork, beef or chicken
- sliced thin, bite sized, -OR- Shrimp, shelled and deveined 1/4 c White vinegar
1/4 c Sugar
1 c Sliced salted radish
(chai Po) 1/4 c Fish sauce (nam pla)
1 c Ground roasted peanuts
:
(coarsely ground) 2 tb Chile powder or paprika
2 c Bean sprouts
1 c Sliced green onion
1 c Sliced cilantro
1 Lime
Ingredient Notes: Chantaboon rice sticks: Re: Pork, Beef, or Chicken, or Shrimp: Re: Sliced salted radish: ======= Soak rice sticks in lukewarm water for 1 hour, drain and set aside. Set wok over high heat, for 1 minute. Heat wok with 1 tablespoon of oil until sizzling hot and coat sides of wok evenly. Add eggs and fry, until eggs set, turn over and fry, until light brown on both sides. Remove from wok and slice thin, bite size. Set aside. Heat 1/4 cup of oil in wok until sizzling hot. Add garlic and cook until fragrant. add meat, stir and cook, until meat or tofu is done, about 1 to 2 minutes. Add rice sticks and vinegar, cook until rice sticks soften. Add
eggs, and the next 5 ingredients, stir to blend. Remove to serving plate. Serve bean sprouts cold on the side. Garnish with green onion and cilantro. Serve with slices of fresh lime. Squeeze lime on pad thai. Serves 10 as a side dish. Serves 6 as an only dish.

-- RECIPE -- (makes 2 portions)
▪150g or 5.5oz Thai style medium rice noodles
▪225g or 1/2lb raw shrimp (cut into large bitesize pieces)
▪75g or 1/2c shallot, rough chopped
▪15g or 3-4 cloves garlic, minced
▪50g or 1/2c roasted unsalted peanuts, chopped and dust sifted off
▪25g or about 1/2c preserved sweet radish (look for sweet not salt), chopped
▪50g or 1/2c scallions (greens only), cut into 1-2” or 2.5-5cm pieces
▪100g or 1c fresh bean sprouts
▪125g or 4oz extra firm/pressed tofu, diced into bite sized pieces
▪Pad thai sauce [stir together: 40g or 3Tbsp thai tamarind concentrate, 60g/1 puck chopped palm ▪sugar (sub brown sugar), & 40g or 2.5Tbsp fish sauce]
▪Chile flakes
▪Lime
▪2 eggs
▪Neutral oil (canola, avocado, light olive, etc)
▪Salt
▪Water if needed
Soak thai rice noodles in room temp water for 1 hour. Drain and cut if needed. Set aside.
Prep all ingredients then preheat a large wok over high heat.
Add a long squeeze of oil to pan then add shrimp and a pinch of salt. Stir fry and keep them moving to cook about 85% through. Transfer shrimp to a bowl.
Return wok to heat, add another squeeze of oil followed by eggs. Scramble in the wok. When mostly cooked, transfer to shrimp bowl.
Return wok to heat, add another squeeze of oil, followed by tofu and a pinch of salt. Stir fry for about 2 mins until nicely golden brown. Add shallots, garlic, radish, and chile flake. Cook for about 30 seconds, stirring constantly. Add soaked rice noodles and sauce. Stir and toss to combine. Cook until noodles are tender but still springy and chewy. You may need to add a splash of water to cook noodles properly. Careful not to add too much water.
Reduce heat to medium and add in cooked shrimp and eggs. Toss to combine, careful not to over work. Add bean sprouts, scallions, and half of the peanuts. Fold everything together and cook for about 30 more seconds to warm through.
Plate up and finish by adding a sprinkle of peanuts and sprinkle of lime.

Chicken Pad Thai
The below is for one (adult size) portion:
60g Pad Thai dried rice sticks
0.75 tbsp tamarind puree
1.5 tbsp brown sugar
1 tbsp fish sauce
1 tbsp oyster sauce
Juice of 1/2 lime plus ¼ for serving
2 tbsp peanut oil
¼ brown onion
½ red chili (keep some for garnish)
2 cloves garlic
2 spring onion greens
80g chicken thigh
1 egg
3/4 cup beansprout (keep some for garnish)
Small handful finely chopped peanuts
Small bunch coriander
