This is how I was taught over 2 decades ago. This is a demonstration meant for the congregation in which I was taught in order to pass down the recipe. Recipe Tips:
* A second rise is intentionally omitted in order for the seal to maintain the best possible appearance.
* If the seal is stuck to the bread, gently pry one side loose with a butter knife. If seal is ruined, you can reshape the dough and repress.
* For a lighter crust, bake at 350F (180C) for 50-60 minutes.
* Before poking holes in the bread, ask your priest if this is permissible or desirable. Traditions and views can vary widely across the church among congregations.
* Do not add sugar, rose water, oil or other additives to the bread or baking sheet. They can damage the delicate metals of the diskos and chalice over time.
* Do not grease the baking sheet or use wax paper if you don’t have parchment paper. Use either a baking sheet with a nonstick surface or a silicone mat.
* Some churches make two loaves, one placed one on top of another and baked together to form a single loaf. This double-loaf represents the two natures of Christ: human and divine. You will need to double the recipe above if you are making this style and follow the directions according to your church.
* If using a darker pan, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.
* Do not use cooking spray on nonstick coated surfaces.
* Bake until center reads 210F (99C) and bottom of loaf sounds hollow when tapped.

Greek Bread { Horiatiko } Supergolden Bakes
Greek Village Bread (Horiatiko Psomi / χωριάτικο ψωμί) is easy to make and incredibly delicious! This rustic country-style loaf has a wonderfully soft crumb and crisp crust.
• White bread flour – otherwise known as strong flour. This type of flour is higher in gluten and will give your bread a wonderful rise.
• Fine semolina – semolina is made from durum wheat and has a pale yellow colour. This means your horiatiko bread will also have a golden crumb! Semolina can look similar to polenta (cornmeal) in appearance but it is not the same ingredient at all.
• Rapid rise dry yeast – this is mixed in with the dry ingredients before any liquid is added and doesn’t require activation.
• Salt and sugar
• Milk
• Melted butter (cooled)
• Water (tepid)
• Egg white and water for egg wash plus sesame seeds to top

640 grams (5 cups) all purpose flour (high gluten preferably)

What is Rustic Bread
The term Rustic Bread is a very relative term.
For me, a rustic bread is a bread that has a heavy crust, an open texture, and a delicious flavor.
It is made with fewest ingredients ;Flour ,water, salt and a leavening agent a starter, either a wild yeast starter, such as sourdough, or a “biga” or “poolish”
To get delicious flavor to a rustic bread or a crusty bread usually it requires a long fermentation.
For that we add a starter to our bread dough.
What is the difference between poolish and biga
Biga and poolish are types of pre-ferments used in Italian and French baking respectively.
Poolish, the wetter one, where flour and water are added in almost 1:1 ratio.
Biga is more of a thick preferment as it uses less amount of water, somewhere between 70-80 percent.
How to make this homemade artisan bread
We can make this easy artisan bread in five simple steps
1.prepare the biga(evening)
2.Prepare the bread dough(morning)
3.First proofing (2 hours)
4.Shape the bread
5.Final Rising(50-60 minutes)
Bake the bread at 480 F or 250 C for 18 minutes and then reduce the temperature to 230 c or 450 F and bake for another 10-12 minutes.
