How To make Oatmeal Apple Cheese Cookies
------------------------------PATTI - VDRJ67A------------------------------ 3/4 c Flour
1/3 c Brown sugar; packed
1/2 ts Baking powder
1/2 ts Cinnamon
2/3 c Margarine; softened
1 Egg
1 ts Vanilla
1 1/2 c Rolled oats
1 c Cheddar cheese; shredded
1 c Nuts; chopped
1 c Apples; peeled, chopped
- 1 to 2 medium In a large bowl, combine flour, brown sugar, baking powder and cinnamon. Mix in butter with pastry blender or spoon. Add egg, vanilla, oats, cheese, nuts and apples. Mix well. Drop by heaping teaspoonfuls onto ungreased cookie sheets ( cookies will spread slightly). Bake at 375~ for 12-14 minutes or until golden. Remove to wire racks to cool. Store airtight. Freeze well. -----

EASY HOLIDAY OATMEAL COOKIES
1/2 cup melted salted butter
3/4 cup brown sugar
1 whole egg
1/2 teaspoon baking soda
1/2 teaspoon cinnamon powder
1 cup all-purpose flour
1 1/2 cups oatmeal (whole)
1 cup raisins or cranberries
1/2 cup coarsely chopped walnuts

►100 gr(1 cup) oats
►120 gr(1/2 cups) cottage cheese
►120 gr(1/2 cups) yoghurt
►80 gr(1/2 cups) pumpkin seeds
►2 egg whites (75 gr)
►5 gr(1 teaspoon) salt
►10 gr(2 tbsp) grinded linseeds
►100 gr(1 cup) oat flour
???? Utensils and equipment
►1 medium bowl
►1 spatula
►1 blender or food processor
►1 baking tray
???????????? Preparation
1. start by grinding the linseeds
2. linseeds will absorb better the water
3. cover the linseeds with water (about 6tbsp)
4. To make the oatmeal flour, blitz the oats in a food processor for about 1 minute (the flour does not need to be too fine)
5. Beat the egg whites together with salt with a whisk until soft peaks are formed
6. Add the linseeds, cheese and yoghurt and mix until everything is combined
7. Add the flour, oats and pumpkin seeds (you can add any other seeds or skip them)
8. Mix well until combined and rest for 15-20 minutes
9. preheat the oven 180 degree Celsius 350 degrees Fahrenheit
10. form the biscuits by rolling them between your palms and flatten on the baking tray
11. repeat for the rest
12. Bake the formed biscuits for 35 minutes
13. Remove from the oven and let them cool
14. ENJOY
This recipe makes about 10-12 delicious biscuits

Ingredients
* 2 1/2 cups (231 g) rolled oats (or quick oats)
* 1/2 cup + 2 tbsp (100 g) water
* 2 1/2 tbsp (52 g) maple syrup
* 2 1/2 tablespoons (33 g) extra virgin olive oil
* 2 teaspoons vanilla
* 1/4 teaspoon salt
Instructions
* Preheat the oven to 350°F (180°C).
* Place the rolled oat in a blender or food processor and blend until you get a coarse! flour.
* Mix the oatmeal, vanilla, and salt in a bowl, and add the extra virgin olive oil.
* Bring the water with maple syrup to the boil and pour it into the bowl. Mix with a spoon and let it cool slightly.
* Then use your hands to form a dough. Feel free to add a bit more water if the dough feels too crumbly. Just add it a tablespoon at the time.
* Roll out the dough until very thin (3mm) and cut in circles with a round cookie cutter. If the dough is a bit sticky, I normally roll it out on a baking sheet, to avoid using additional flour.If the dough is too crumbly, don't add too much water. Simply roll out a quarter of the dough at a time.
* Place the circles on a flat tray covered with a baking sheet, no extra grease required.
* Bake until golden brown, for 15-20 minutes. If your oven doesn't cook evenly, make sure to turn the trays half-way through baking. Keep a close eye on the oatcakes in the last 5-8 minutes, to avoid overcooking them.
* When the oatcakes are ready, remove from the oven and allow to cool on a wire rack.
* Keep in the jar.
