1 c Butterscotch Chips
- (Hershey's) 1/2 c Reese's Peanut Butter Chips
1 tb Shortening
-(do not use butter, - margarine or oil) 1 1/2 c Chow mein noodles
-- coarsely broken Line tray with wax paper. In medium microwave-safe bowl, place butterscotch chips, peanut butter chips and shortening. Microwave at HIGH (100%) 1 minute; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, just until chips are melted and mixture is smooth when stirred. Immediately add chow mein noodles; stir to coat. Drop mixture by heaping teaspoonfuls onto prepared tray or into paper candy cups; let stand until firm. If necessary, cover and refrigerate until firm. Store in tightly covered container in refrigerator. About 2 dozen candies. Variation: Chocolate Haystacks: Substitute 1 cup Hershey's Semi-Sweet Chocolate Chips or Hershey's Milk Chocolate Chips for butterscotch chips. You can also substitute the chow mein noodles for pretzels, the creamy peanut butter to another type of nut butter, or you can add in marshmallows to the melted butterscotch chips instead of peanut butter. The options are endless for these no bake 3 ingredient butterscotch haystacks dessert recipe!
Ingredients
1 cup butterscotch chips
1/2 cup creamy peanut butter (Feel free to substitute peanut butter to another type of nut butter)
1/2 cup peanuts (or other types of nuts, candies, pretzels)
2 cups chow mein noodles
Directions
1. In a large microwave safe bowl, add in 1 cup of butterscotch chips. Microwave the butterscotch chips in 15 second intervals, stirring the butterscotch chips each time after removing them from the microwave. Continue this process until the butterscotch chips are fully melted. If you do not have a microwave, feel free to use a double boiler to melt the butterscotch chips.
2. Add a 1/2 cup of creamy peanut butter. Feel free to substitute the creamy peanut butter for another type of nut butter if you prefer. Mix the creamy peanut butter into the melted butterscotch chips until it's fully combined.
3. Add two cups of chow mein noodles to the mixture and carefully fold the noodles in until they are fully coated. Feel free to add nuts, pretzels, or candy for extra flavor or a crunch.
4. Use a tablespoon to take a scoop of the mixture and place on a baking sheet lined with parchment paper. Don't worry about the appearance of these as they will not look neat and you really can't mess these up. Feel free to add extra candy on top as decoration. Refrigerate for about 15 minutes or until they have hardened.

These Butterscotch Haystacks are an easy gluten free no bake recipe. My Step Mom used to make them when I was a kid. She would use Peanut Butter, Butterscotch Chips and Chinese Chow Mein Noodles from a can. Chow Mein noodles are not gluten free but swapping them out for canned potato sticks works perfectly!
Ingredients:
Utz Potato Stix, Original – 15 Oz. Canister -
Full Recipe:
6 oz. Butterscotch Chips
½ Cup Peanut Butter
2 Cups Canned Potato Sticks
Directions:
1. Add the butterscotch chips and peanut butter to a large microwave safe bowl.
2. Microwave on high in 30 second increments, stirring between each increment, until the chips are melted and combined with the peanut butter.
3. Add potato sticks and combine well.
4. Using a tablespoon, drop a spoonful of the mix onto a wax paper or parchment lined baking sheet.
5. Refrigerate for 15-20 minutes until firm.
6. Enjoy!

This easy no bake dessert has been in my family for years, and I hope you make it part of your tradition. These aren't just for Christmas, they're perfect anytime of the year! From my home to yours, enjoy!
Butterscotch Ingredients:
1 (11oz) bag butterscotch morsels
3/4 cup peanuts, toasted
1/2 cup chow mein noodles
Caramel Ingredients:
1 (10oz) bag caramel morsels
3/4 cup walnuts, toasted
1/2 cup chow mein noodles
Method(For Both):
Toast nuts on a lined sheet pan at 400 Fahrenheit for 4-6 minutes.
On medium heat in a double boiler, or over a bain-marie, heat entire package of morsels till completely melted.
Add chow mein noodles, and crush into smaller pieces with spoon.
Add toasted nuts and mix until everything is completely coated with melted morsels.
Spoon mounds of mixture onto lined pan into any size you choose and let cool completely at room temperature.
They will set and harden.

Ingredients
▢12 ounces chocolate chips
▢12 ounces butterscotch chips
▢12 ounces chow mein noodles

Instructions
Combine the chocolate chips and butterscotch chips together in a microwave safe bowl.
Heat the chocolate and butterscotch in the microwave at full power for 30 seconds. Stir and heat for 30 second increments until smooth.
Add the chow mein noodles to a large bowl and pour the chocolate mixture over the noodles. Stir to coat.
Spoon heaping tablespoons of the chow mein noodles onto a baking sheet lined with parchment or a silpat mat. Decorate with sprinkles, if desired.
Allow the cookies to set, approximately 20-30 minutes at room temperature.
