Welcome to our sixth livestream cookalong. Join Mrs Barry, Phoebe, Chloe & Barry as we make a some Easter Biscuits!
Recipe: 100g butter | 100g caster sugar |1 egg, separated | 200g plain flour | 1tsp mixed spice |optional) | 50g currants or raisins | To top the biscuits - 2 tbsp caster sugar
Pre-heat oven to 200c/400f/Gas 6 & line a baking tray with parchment or a silpat. In a bowl add the sugar and butter together, then beat until fluffy and combined, adding in the egg yolk only towards the end and again beating that through. Sieve in the flour, mixed spice and currants, mix really well until a dough is achieved. Roll out the dough on a floured surface until about ¼ inch thick.
Use cookie cutters to cut the dough and lift carefully onto the baking tray. Any leftovers can be rolled up again. It's best to keep the dough chilled / wrapped in the fridge for a moment if it gets too warm and sticky whilst doing this step.
Bake them for 10 minutes, they won’t look much different at this stage but remove the oven and brush the biscuits with some egg white briefly beaten with a fork in another bowl, sprinke sugar on top of the biscuits then return for a further 3-4 minutes until just lightly browned, leave to cool on tray to firm before storing /eating!
