Für einen Kuchen von 27 cm Durchmesser benötigt man:
Teigboden:
100 g Zucker
150 Butter
1 Ei
1 Prise Salz
300 g Mehl
2 TL Backpulver
Belag:
6 Nektarinen, reif
20 g Pinienkerne
20 g Walnüsse in Stücke geschnitten
20 g Pistazien
1 EL Gelee (z. B. Johannisbeere oder Quitte)
1 EL Wasser
Puderzucker

Ingredients :
500 g plums
2 à 3 tbsp granulated sugar
1 tsp pure vanilla extract
Steps :
1. Wash and cut the plums in quarters. Put everything in a baking dish along with the sugar and vanilla. Mix well and roast for about 15 min in a preheated oven at 390F (200C) or until the plums are super juicy and well caramelized.
2. Eat warm with ice cream or use in another recipe like my Vegan Plum Cake.

Easy & Delicious Juicy Fruit Pie Recipe | Plums & Nectarines Dessert
Are you looking for a delicious and easy dessert recipe that will impress your family and friends? Do you love the combination of juicy fruits and creamy custard? If so, you will love this plum and nectarine pie with custard filling. This pie is made with fresh plums and nectarines, cinnamon, sugar, lemon juice, eggs, flour, corn starch, milk, butter, vegetable oil, baking powder, and vanilla sugar. It has a crispy crust, a smooth and rich custard layer, and a sweet and sour fruit topping. It is perfect for any occasion, whether it is a birthday, a picnic, or a cozy night in.
In this video, I will show you how to make this amazing fruit pie from scratch in under an hour.
You will need the following ingredients:
* For the filling:
* 300 g of plums
* 300 g of nectarines
* 1 teaspoon of cinnamon
* 20 g of sugar
* Juice of one lemon
* For the custard:
* 1 egg
* 60 g of sugar
* 1 teaspoon of vanilla sugar
* Zest of half a lemon
* 15 g of flour
* 15 g of corn starch
* 300 ml of milk
* For the base:
* 1 egg
* 80 g of sugar
* Zest of half a lemon
* 50 g of vegetable oil
* 50 g of butter
* 250 g of flour
* 1 teaspoon of baking powder
You will also need a round baking pan, parchment paper, a knife, a cutting board, a bowl, a whisk, a pan, a pastry bag or cling film, and an oven.
Let’s start by preparing the filling. Cut the plums and nectarines into small cubes. You can use other fruits, such as apricots or peaches. Sprinkle the fruit with cinnamon and sugar and add the juice of one lemon. Mix everything well and set aside.
Next, let’s prepare the custard. Beat one egg into the pan. Add the sugar, vanilla sugar, and lemon zest. Mix everything well. Add the flour and corn starch. Mix everything again and add the milk. Stir and place the pan on the stove. Cook over low heat, stirring constantly. When the cream thickens, remove the pan from the heat. Transfer the cream to a pastry bag or cover the cream with cling film to prevent it from airing.
Now let’s make the base for the pie. Beat one egg into a bowl. Add the sugar and lemon zest. Mix everything well. Add the vegetable oil and softened butter. Mix again. Add the sifted flour and baking powder. Knead the dough until you get a homogeneous dense dough.
Separate two-thirds of the dough and place it in the baking pan lined with parchment paper. Form the dough into a pie base. Use the remaining dough to make radial edges inside the base.
Now we will lay out the filling. Place custard on the bottom layer using a pastry bag or a spoon. Next we lay out the plums and nectarines evenly over the custard layer. You can add more fruit if you like; they shrink in volume after baking.
Place the pie in the oven preheated to 180°C for about 40 to 50 minutes or until golden brown.
When the pie is ready, let it cool slightly on a wire rack. You can sprinkle some powdered sugar on top for extra sweetness.
