Slow Cooker Pot Roast With Cream Of Mushroom Sauce Ingredients
3.5 - 4 lb beef chuck roast
4 tablespoons flour, divided
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon Garlic powder
1 tablespoon avocado oil or olive oil
2 tablespoons butter
1 medium onion, chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
3 tablespoons flour
½ cup beef broth
½ cup milk
1 tablespoon Worcestershire sauce
1 cup beef broth
Salt and pepper to taste
Slow Cooker Pot Roast With Cream Of Mushroom Sauce Directions
Begin by trimming up a 3.5 to 4 pound chuck roast, removing any hard fat and gristle.
Next, mix up 2 tablespoons flour… ½ teaspoon salt…. ½ teaspoon black pepper…. And a ½ teaspoon garlic powder. Sprinkle the flour mixture over the roast…. And pat in….flip and repeat. You’ll probably have about a tablespoon left… set this aside for later.
Heat a large skillet over medium high heat and add about a tablespoon of avocado or olive oil. Once the oil is hot, add the roast, and sear the beef, cooking for about 4 - 5 minutes on each side until crusty and brown. Once the beef is seared, place it in the bottom of the crock pot.
Slice about ½ a pound of mushrooms, I’m using baby portabellas… Peel and chop one medium sized onion.
Next to make the homemade cream of mushroom sauce. Note: If you're short on time or ingredients, you can also substitute one can of cream of mushroom soup and one can of French Onion soup, adding directly to the slow cooker, and skipping in the recipe to adding the beef broth to the slow cooker.
Homemade Cream of Mushroom Sauce Directions
Begin heating the pan we used for searing, and add 1 tablespoon of butter. As it melts, add the onion, and cook for about 2 minutes, scraping the bottom of the pan to bring up all the crusty bits leftover from searing the beef.
Add 2 cloves of garlic and stir, cooking for about 30 seconds, then add the mushrooms. Continue to saute the mixture until the mushrooms are golden brown. Add the second tablespoon of butter. Add the leftover flour from earlier, and add 2 more tablespoons of flour, stirring to incorporate. Cook the mixture for about 2 minutes.
Slowly add ½ cup of beef broth, stirring the roux mixture so it begins to form a thick base. Slowly pour in ½ cup of milk, stirring to incorporate and let this cook for about 2 minutes. Add salt and pepper to taste.
Pour in 10 oz of beef consomme or beef broth to the slow cooker. Add 1 tablespoon Worcestershire sauce. Pour the cream of mushroom sauce over the roast. Cover and cook on low for 6 - 8 hours, until the meat is melt in your mouth tender!
You can serve this roast just like this, or make an easy brown gravy. I’m using a fat separator, putting the gravy into a medium saucepan. Bring to a boil. Mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and pour into the gravy. Stir and cook to thicken the sauce.
We love this pot roast with potatoes, smothering the boiled or mashed potatoes with the rich mushroom gravy.
Thank you so much for watching and I’ll see you in the next video!
