MISSISSIPPI MUD CAKE
Mississippi Mud Cake! A delicious, decadent cake that is so easy to make. It will satisfy that chocolate craving.

Mississippi Mud Cake
1 cup chopped pecans ½ cup unsweetened cocoa
1 cup butter 4 large eggs
1 (4oz.) semi-sweet chocolate baking bar, chopped* 1 tsp. vanilla extract
2 cups sugar ¾ tsp salt
1 ½ cups all-purpose flour 1 (10.5 oz.) bag mini-marshmallows
1. Place pecans in a single layer on a baking sheet.
2. Bake at 350° for 8-10 minutes or until toasted.
3. Microwave 1 cup butter and semisweet chocolate in a large microwave-safe glass bowl at HIGH 1 minute or until melted and smooth, stirring every 30 seconds.
4. Whisk sugar and next 5 ingredients into chocolate mixture. Pour batter into a greased 15x10x1-inch jelly-roll pan.
5. Bake at 350° for 20 minutes. Remove from oven, and sprinkle evenly with miniature marshmallows; bake7 or so minutes until just before turning brown. (You can brown but I like when the marshmallows are dry just before browning.) Drizzle warm cake with Chocolate Frosting (recipe below), and sprinkle evenly with toasted pecans.
*I have used 2 oz. of bittersweet chocolate bar and 2 oz. of German chocolate baking bar combined when I didn’t have semi-sweet. It was very good.
Chocolate Frosting
½ cup butter 1 lb. powdered sugar
⅓ cup unsweetened cocoa 1 tsp. vanilla extract
⅓ cup milk
Stir together first 3 ingredients in a medium saucepan over medium heat until butter is melted. Cook, stirring constantly, 2 minutes or until slightly thickened, remove from heat. Beat in powdered sugar and vanilla at medium speed with an electric mixer until smooth.

This was one of my dad favorite cakes and my stepmother Katherine had to make it for him all of the time.. we always had this cake for Thanksgiving and Christmas every year I can remember after she married my dad.. my oldest daughter favorite cake also ..
Ingredients… Cake
1 cup ( 2 sticks) unsalted butter
2 cups imperial sugar
1/2 cups coco powder
4 large eggs
2 teaspoons vanilla extract
2 cups All purpose flour
1/2 tablespoon baking powder
1/2 tablespoon baking powder
1 jaw marshmallow crème
Frosting …
1/2 cup( 1 stick) unsalted butter
6 tablespoon coco powder
4 cups Confectioners powdered sugar
1 teaspoon of vanilla extract
1/2 cup evaporated
1 cup pecans , chopped
Preheat oven to 350
Cream butter until soft ..
add sugar and cream that together then add the coco powder ..once creamed add 1 egg at a time beating each a little ,,
Then shift together flour and baking soda and baking powder ..pour into the bowl with the wet ingredients ,, scape batter good off the bowl.
And put in the cake pan.. the pan must be a 9/ 13 inch pan ..put parchment paperin the pan .. and butter the pan a must .. Soon as it come out of the oven put the marshmallow cream on top.. then directly after they put the frosting on top..
Bake at 350 for 35 minutes

This classic dessert is sure to be the best chocolate pie you’ll ever try.

INGREDIENTS
Crust
2 cups finely ground chocolate graham crackers about 18 full-size graham crackers or 2/3 of a 14.4 oz box
2 tbsp finely ground pecans
2 1/2 tbsp sugar
6 tbsp butter melted
Fudge Brownie Layer
6 tbsp butter
4 oz semi-sweet baker's chocolate
7 tbsp sugar
6 tbsp packed brown sugar
5 tbsp cocoa powder
3/4 tsp salt
1/4 cup hot water
1 tsp vanilla extract
2 tbsp all-purpose flour
5 eggs
Chocolate Pudding
4 egg yolks beaten
2/3 cup sugar
4 tsp cornstarch
7 tbsp cocoa powder
1 1/2 cups heavy whipping cream
1 tbsp butter
Whipped Cream Topping
1 1/2 cups heavy whipping cream
1/4 cup powdered sugar
semi-sweet chocolate for garnish shavings
INSTRUCTIONS
Crust
Preheat the oven to 325º. Prepare a pie pan by using the butter wrapper to butter the bottom and side.
In a medium bowl, combine ground graham crackers, pecans, sugar, and butter.
Press mixture into the pie pan. Press mixture on the bottom as well as the sides of the pan. Bake for 10 minutes.
Fudge Brownie Layer
Increase the oven temperature to 350º.
Put butter, semi-sweet chocolate, sugars, cocoa powder, and salt in a medium size pan. Heat over medium heat until butter and chocolate are melted, stirring constantly and combining the ingredients until smooth.
Remove from heat and immediately add hot water, vanilla, and flour. Combine until smooth.
Add eggs one at a time, stirring well after each one.
Pour batter over the graham cracker crust. Bake for 35 minutes.
Let cool completely.
Chocolate Pudding
Place egg yolks in a small heat proof bowl. Set aside.
In a medium size pan, whisk together sugar, cornstarch, cocoa powder, milk, and heavy cream. Bring to a low boil, stirring constantly for 2 minutes.
Pour approximately 1 cup of the hot milk mixture into the egg yolks, whisking constantly until well combined. Add the egg mixture to the rest of the milk mixture. Bring to a low boil and stir for 2 minutes more.
Remove from heat, add butter, and stir until the butter is melted.
Pour into a medium sized bowl, place plastic wrap on top with the plastic wrap resting directly on the pudding. Refrigerate until set.
Pour pudding over the pie, spreading close to the crust edge but not necessarily touching the crust.
Whipped Cream Topping
Pour whipping cream into a medium sized mixing bowl. Mix on high speed until stiff peaks begin to form. Gradually add powdered sugar.
Spread whipped cream on top of the pie.
Using a vegetable peeler, peel off chocolate shavings from the semi-sweet chocolate. If necessary, microwave the chocolate for 10 or 15 seconds to soften it before making the shavings.
