How To make Mini Shrimp Quiche
1 package refrigerator butterflake dinner
rolls
(12 rolls) 24 sm. :
fresh shrimp,
peeled, deveined & cooked 1 egg :
beaten
1/2 cup light cream
1 tablespoon brandy
1/2 teaspoon salt
1 dash pepper
1 cup Gruyere cheese -- shredded
Grease 24 (1 3/4 inch) muffin tins. Separate each dinner roll in half and press into muffin cups. Place one shrimp in each shell. Combine egg, cream, brandy, salt and pepper. Divide evenly among shells using about 2 teaspoons for each. T op with shredded cheese. Bake at 375 degrees for 20 minutes, until golden. Cool and freeze. To serve, place frozen appetizers on a baking sheet and bake at 37 5 degrees for 8 to 10 minutes. Makes 2 dozen. This little crust idea is great! Use it for all your little mini-tarts. Ingredients
1 refrigerated pie crust
2/3 cup chopped sweet onion
12 asparagus tips, trimmed to 4 inches
1 1/2 cups small shrimp, peeled and deveined
4 large eggs
2/3 cup heavy cream
1/3 cup whole milk
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon freshly grated or ground nutmeg
1 1/2 cups shredded cheese of your choice
(Reserve 1/2 cup)

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.

How To Make Seafood Quiche
Seafood Quiche is made by Chef Remy in this short video. It is easily one of the best tasting recipes you will ever make. This is a basic recipe that you can build on with other ingredients you may have on hand. It can easily be changed into a vegetable quiche or even a Quiche Lorraine. Try this one anytime. The pie shell is bought frozen since it was so inexpensive and easy to acquire.
INGREDIENTS: 1 frozen pastry for 9 inch one-crust pie - 1/2 cup chopped cooked frozen shrimp, tails off, thawed, patted dry - 1/2 cup chopped seafood sticks (imitation crabmeat), patted dry -1 cup Swiss cheese, shredded - 1/3 cup chopped green onion - 1/3 cup chopped yellow onion - 4 eggs, large - 2 cups whipping (heavy) cream - 1/2 tsp salt - 1/4 tsp pepper - 1/8 tsp cayenne pepper.
METHOD: Sprinkle the seafood, cheese, yellow onion and green onion inside the bottom of the pie crust evenly. Whisk eggs slightly in a large bowl. Add the cream and salt and peppers. Mix well. Pour into the pie crust.
Bake at 325 degrees F for 45 to 50 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool slightly for 10 minutes before serving.
