SCHNITZ un KNEPP
This is a simple but delightful OLD PA Dutch dish! Easy, feeds a bunch, and tastes amazing! Perfect winter comfort food!
SCHNITZ un KNEPP
INGREDIENTS
1 pound dried apples
2 to 4 tablespoons brown sugar (depending on your personal taste)
1 chopped medium onion
3 pounds end piece smoked ham
2 cups sifted flour
1 teaspoon salt
1 egg, beaten
3 Tablespoon melted shortening
4 teaspoon baking powder
1/4 teaspoon pepper
2/3 cup milk
DIRECTIONS
Place dried apples in a bowl and cover with enough water to cover. Set aside and soak for 3 hours.
Place hamhock in large crockpot and cover. Add enough water to just cover meat and let go on low about 5 hrs or meat falling off bone.
When ham is tender, remove from pot, pull ham from the bone, and cut into cubes, return to pot and add the onion and dried apples along with the water in which the apples were soaked.
Add the brown sugar and simmer for 30 to 40 minutes OR until apples are tender.
When apples are tender, make the knepp.
For the knepp: In a bowl, stir together flour, baking powder, salt, and pepper.
In another bowl, mix egg and milk well, then add to dry ingredients. Drizzle in the melted shortening and mix just enough to dampen dry ingredients.
With the ham broth in the pot boiling, drop the dumpling batter (knepp) from a table spoon on to the boiling broth. Cover tightly, keep the broth bubbling lightly and cook 18 to 20 minutes without lifting lid.
Serve hot with broth.
Goo homemade sweet white bread with butter is perfect with this!

I visited Brazil this year, July 2017. I had a delightful visit with my cousin Hulda Löwen, also with her daughter Edeltraud and son-in-law Reginaldo Gomes. In this video I had the opportunity to watch them make Spätzle, traditional German noodles. It was so fun to be part of their day to day routines. If you like to know more about their Restaurant called Frutilhas Löwen, please check out this video: They live on a farm, in Witmarsum-PR, about one hour away from Curitiba. Witmarsum is a colony of German-speaking Mennonites. Since 2011, Hulda runs a restaurant called Frutilhas Löwen. It started on the front porch of their shed. Soon they had to expand since the popularity of the restaurant grew quite quickly. Together with her daughter and son-in-law, the business is quite successful. Not only lunch is served, but they also sell all kinds of homemade goodies, such as berry jellies, cookies, yogurt and baked goods. If you are visiting south Brazil, close to Curitiba-PR, Witmarsum is a beautiful countryside place to visit and Frutilhas Löwen definitely is a place you want to stop by. INGREDIENTS:
1 pound Certified Angus Beef ® 80% lean ground beef
1 teaspoon canola oil
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon paprika
1 1/2 cups finely shredded cabbage
1 small onion, diced (about 1 cup)
1 tube store bought pizza dough (13.8 oz.)
4 slices American cheese

Here's how to make our popular year 8 recipe for the German classic, Pfeffernusse.
Ingredients:
150g plain flour
1/4 tsp ground cinnamon
1/4 tsp ground allspice
Pinch of ground nutmeg
Pinch of ground cloves
Pinch of bicarbonate of soda
Large pinch of black pepper
60g butter
40g black treacle
50g soft brown sugar
1 egg
1/2 tbsp icing sugar
Method:
1. Preheat the oven to 180c/Gas Mark 4.
2. In a bowl use an electric whisk to cream the butter, treacle and sugar together.
3. Add the egg and stir in.
4. Add the flour, spices and bicarbonate of soda. Use the whisk to mix until the ingredients are blended.
5. Roll 12 equal walnut sized pieces into balls and place onto two flat baking trays, spacing them apart by about 2 inches.
6. Bake for 12 minutes.
7. Allow to cool once removed from the oven - they will be soft at first then harden slightly as they cool.
8. Once cool dust with icing sugar.
