How To make Melon with Prawns and Strawberries
1/2 Medium-size avocado
1/2 ts Lemon juice
1 Medium-size, ripe seasonal
-melon (i.e. ogen, -cantaloupe or honeydew) 1 Celery heart, chopped
4 oz Strawberries, hulled and
-sliced 8 oz Cooked, peeled prawns
-(thawed if frozen) 2 Little Gem lettuces, rinsed
-and torn into pieces For the dressing: 8 oz Strawberries
1 ts Caster sugar
2 ts Olive oil
1 tb Unsweetened orange juice
2 ts Chopped fresh parsley
Salt and freshly ground -black pepper Preparation time: 20 minutes Freezing: not recommended Peel and chop the avocado and place it in a mixing bowl. Sprinkle it with the lemon juice to prevent it from discolouring. Halve the melon, discard the seeds and scoop out the flesh using a melon baller (or cut it into cubes). Gently combine the melon, chopped celery, strawberries and prawns with the avocado and refrigerate until needed. Meanwhile, puree the dressing ingredients in a food processor or liquidiser. Arrange the lettuce on 4 plates and divide the prawn mixture between them. Pour the dressing over and serve immediately. Cook's notes: when melons are ripe they should 'give' slightly when pressed at the stalk end. Wrap up melons well if storing them in the refrigerator as otherwise they will permeate everything around them with their heady scent.

Episode 11 - Home made Strawberry flavored Melon Jam!!!
Today we will show you how we made strawberry flavored melon jam from home using a fresh winter melon (ash gourd) from the backyard
We first cut the melon in to larger pieces.

Episode 7 - A delicious creamy curry from home-grown Ash Gourd!!
Then we peel off the skin and the cut them into smaller pieces.
We rinse them with water and make sure all the seeds are removed.
Next we blend them by adding adequate water as shown here to make a pulp like paste.
The main ingredient to add is Sugar. We need 450g of Sugar for 500g of winter melon. Today we are using 1.25Kg of winter melon for this jam so we need to add around 1.15Kg of sugar.
We then start slowly cooking the pulp after adding sugar while giving a regular stir for 10 mins
We add a bit of red colouring to get the strawberry colour.Then a little bit of strawberry essence is added to get the strawberry flavor. You can easily find this essence from the market.
Adding ingredients are done. We now let it slowly cook for another 45 mins while giving it regular stir until the pulp becomes thick like jam. Make sure to keep some sterilized jam bottles ready to fill them in.
Once it cools down, you can fill in the jam bottles for your regular usage.
We managed to make four bottles full of jam and it tastes just like what you get from the market.

Juicy, yet unripe Star fruits was the Star of our well prepared lunch table | Traditional Me
There is a small tree of star fruit in the edge of our garden. Though the tree is not so matured it was filled with star fruits(Carambola) in every branch of the tree. They all were moderately ripe yet very juicy at all. I went and picked some unripe star fruits to make a spicy curry in the method of making pineapple curry as an accompaniment to the prawn ghee rice which I’ve decided to make for lunch. When sliced, the star fruits are like stars which have fallen into the kitchen. Brother doesn’t like to pick star fruits unripe as he always want to keep them until they get fully ripen. I could't say anything since that tree is his own. Yet the drink that he made by adding the unripe star fruits with strawberries, ripen mangoes was awesomely tasty and very colourful as well. The leftover of the squeezed star fruits mixed with onions and tomatoes was also a tasty salad which was a true match with the rice dish.
The rice made with the lagoon prawn curry which was mixed with button mushrooms, capsicum and roasted cashew nuts were given a different rich taste when the ghee was sprinkle on top of it and cooked it under high flame. This rice dish is getting a different taste when cooked on top of the prawn curry steam and once the curry gets mixed up it gives another different taste. Further I didn’t have a time to do a salad at all because it was a mad rush with the lunch preparation but Thank God that brother have already decided to make his own salad from the leftover Star fruits. Grandmother really like to eat these type of randomly made dishes. The delicious drink that brother had made at the last lapse of the lunch was really a match made in Heaven!
