How To make Madras Meat Curry
1 1/2 lb Beef round steak
2 tb Vegetable oil
1 lg Onion, finely sliced
4 Whole cloves
4 Green cardamom pods, bruised
3 Green chiles, seeded, finely
-chopped 2 Dry red chiles, seeded,
-crushed 1 Inch piece fresh gingerroot,
-grated 2 Garlic cloves, crushed
2 ts Ground coriander
2 ts Ground turmeric
1/4 c Water
1/4 c Tamarind nectar, see note
-below Salt to taste Lettuce leaves to garnish Cut beef into 1-ich cubes. Heat oil in a large heavy saucepan, add beef and cook until browned all over. Remove with a slotted spoon and set aside. Add onion, cloves and cardamom to pan; cook, stirring, about 8 minutes, until onion is soft and golden brown. Stir in chiles, gingerroot, garlice, corinder and turmeric; cook 2 minutes. Return beef to pan, add water and cover. Simmer 1 hour. Stir in tamarind nectar and salt; simmer another 20 to 30 minutes, until beef is tender. Serve, garnished with lettuce leaves. Serves 4. Note: Tamarind nectar: Soak a walnut-sized piece of tamarind paste in one cup boiling water about 20 minutes, then squeeze in cheesecloth to extract liquid; discard pulp. Salt to taste
Oil - 3 tbsp

Ps: Check salt quantity in the Meat masala before adding salt to the curry. Adjust accordingly.

This Delicious Beef Madras is so easy to prepare and is so full of flavour.
Ingredients
2 Tbls oil 2 Tbls Ghee
Half Kg Beef
2 Onions
1 Ginger grated
5 Clove Garlic Grated
Half Tsp Cumin Seed
3 Green Chilli chopped
2 Stalk curry leaves
1 Tbls Coriander powder
1 Tsp Kashmiri Mirch
1 Tsp Cumin powder
1 Tsp Mustard Powder
1 Tsp Chilli Powder
3/4 Tsp Turmeric
3/4 Tsp Mango powder
3/4 Tsp Garam Masala
1/4 Tsp Black Pepper powder
3/4 Cup Tin Tomatos
200 Mls Coconut milk
Salt to taste

Mutton Gravy Recipe in Tamil (Semi Gravy) | Mutton Masala Recipe | How to make Mutton Curry in Tamil
In this video we will see how to make Mutton Curry in Tamil. This is a semi gravy type of mutton masala which is a great side dish for parotta, chapathi, idli, dosa and also goes excellent with rice and biryani. In this mutton gravy we are going to use the ground up spices as ingredients instead of freshly ground masala. Hence this recipe is ideal for beginners who might not have the kitchen appliances for grinding and also this method is much faster and easier to control the taste of the recipe. The main step in this recipe is cooking the mutton pieces. We are going to cook the mutton pieces in a pressure cooker for 4 whistles (about 25 minutes if you don't have a whistle). Also don't use too much water in the pressure cooker because it will dilute out the flavor. Only add water to barely submerge the mutton pieces. Also transfer the entire contents of the pressure cooker into the pan (Don't drain the water from cooker).

1Kg Diced Beef
2 med Onions finely chopped
2 Tbsp Garlic/Ginger Paste
6 Small Green Chillies finely Chopped
1 Tbsp Garam Masala
1 Tsp Turmeric
1 Tbsp Hot or Extra Hot Chilli Powder
1 Tsp Yellow Mustard seeds
1 Tbsp Madras Curry powder
400g Tin Tomatoes Blended
2 Tsp Tomato Puree
400ml Coconut Milk
Handful Chopped Coriander
2 Tbsp Single Cream
2 Tbsp Plain Yogurt
1 Tsp Sugar
1 Tsp Salt
This recipe taste EVEN better the next day, so great for advance cooking of for parties.
PRESSURE COOKER METHOD
Follow the recipe as per the slow method in the video until all ingredients are in pot except the cream and yogurt. Cook 25mins from first hiss of pressure cooker. When cooked add in cream and and yoghurt, stir and reduce down until desired consistency. Taste better once cooled a little.
SLOW COOKER METHOD
Prepare the same as the video on the hob, then transfer to slow cooker. Cook according to your slow cookers instruction time. When cooked, transfer back to the hob and add the cream, yogurt and sugar. Reduce down until desired consistency. Salt to taste. READY!!!

1kilo beef trimmings or cubed
1 large onion diced
2 tbsp garlic ginger paste
1 tbsp garam masala
2 tsp black pepper
1 tsp salt
1-2 tsp methi or a good pinch!
2 tbsp curry powder – of choice
¼ cup apple cider vinegar / malt vinegar
1 tbsp coriander powder
1 tsp cumin powder
2 tbsp Worcestershire sauce
1 cup beef stock
2 tbsp tomato puree
2 tsp chili powder or more!!
1 can crushed tomatoes
Splash of water as needed
My cooker only has low and high settings - I cooked on low for 5 hours
