How To make Low Fat Scalloped Potatoes

milk, skim, or soy milk

garlic powder

cayenne pepper

onion, chopped

cheddar cheese, low fat, shredded, optional
Directions:
Peel and slice potatoes thinly. In a saucepan, combine milk, flour, salt, garlic powder and cayenne pepper and cook over medium heat until sauce thickens. Add onions to sauce.
Layer casserole dish with potato slices. Spoon half of sauce over slices and repeat with remaining potatoes and sauce. Cover and bake in oven preheated at 350 degrees for 60 min.
Optional: Remove from oven and sprinkle with low-fat cheddar cheese.

How to bake my version of Scalloped Potatoes
In my research on how to make scalloped potatoes I found that there is no classic recipe for this side dish. There are so many possibilities, you are free to do as you like. So I chose to make cheesy Scalloped Potatoes. (Julia Child used Swiss cheese.) These will go well with your holiday or Sunday roast. They are easy and they taste as good as they look. This is the third of three potato side dish videos I planned for the coming holidays.

Healthier Scalloped Potatoes and Ham
Prep: 10 minutes | Cook: 50 minutes | Serves: 6-8
¼ cup butter
¼ cup flour
1 teaspoon salt
1 teaspoon dried parsley
1 ¼ cup low fat milk
1 cup chicken broth
1 (1.5lb) bag Little Potatoes, thinly sliced
2 cups diced, cooked ham
1 cup shredded low fat mozzarella cheese (or cheese of choice)
METHOD
In a large saucepan, melt the butter over medium heat. Add the flour and whisk until smooth. Cook 1 minute.
Stir in salt and parsley.
Add milk and chicken broth and continue cooking over medium heat, whisking often, until thickened.
Preheat oven to 375 degrees F and lightly grease a 9x13” casserole dish.
Combine sliced potatoes and ham in casserole dish and cover evenly with sauce.
Sprinkle with cheese and bake for 40-45 minutes until potatoes are tender and cheese is golden brown. Let sit for 5-10 minutes before serving.

Cheesy potatoes of any kind is one of my favorites, I mean who doesn't like cheesy potatoes? This is so easy to make, the soft potatoes with the cheesy sauce and bits of charred cheese on the sides is such a wonderful side dish.

Cheesy Potatoes Recipe:
Ingredients:
About 8 russet potatoes (Measure the potatoes in your baking pan)
3 cups cheddar cheese or cheese of your choice
4 tbsp unsalted butter
4 tbsp flour
2 tsp garlic paste
2 cup while milk
Makes 9x13 size baking pan
Bakes for about 1 hour 10 mins
Cooking Process
Cut your potatoes with a mandolin to ¼ inch thick. Soak in water to prevent from turning brown.
In a sauce pan on low heat, add your butter and allow to melt. Once melted, add in your garlic and allow the garlic butter mix to come to temperature for about one minute.
Once your butter has come to temp, then add your flour. Mix well and continue whisking for about 2 minutes once the flour has incorporated into the butter mixture.
After about 2 minutes, your rue should be golden brown. Once the rue is golden brown, it is ready to add the milk. Add the milk little by little, and incorporate the milk into the rue.
Once everything is mixed, add in about 1 ½ cup of cheese, I add close to 2 cups of cheese. I like a thick cheesy consistency.
Incorporate the cheese and mix well.
Strain and dry your potatoes
Pour the cheese sauce over the potatoes and fold in the sauce to coat the potatoes evenly.
Put the coated potatoes in your baking pan, top with remaining cheese and cover with foil.
In a preheated oven 350 degrees, cook for 40 minutes covered and the last 20 – 30 minutes uncovered until the top is golden brown.
