Fireball Glazed Chicken | Delish

INGREDIENTS
1 tbsp. extra-virgin olive oil
4 boneless skinless chicken breasts
kosher salt
Freshly ground black pepper
2 tbsp. butter
2 garlic cloves, minced
1/4 c. Fireball
1/4 c. lime juice
2 tbsp. sriracha
1 tbsp. honey
1 tsp. soy sauce
1 lime, cut into half moons
1 tbsp. chives, finely chopped
DIRECTIONS
1. In a large skillet over medium heat, heat oil. Add chicken and season with salt and pepper. Cook until golden, 6 minutes per side. Transfer to a plate.
2. To skillet, add butter. Add garlic and cook until fragrant, 1 minute, then add Fireball, lime juice, Sriracha, honey, and soy sauce. Stir to combine and bring to a simmer. Add in limes and add back in chicken. Simmer 3 minutes or until sauce thickens slightly. Baste chicken with a spoon as sauce simmers.
3. Garnish with chives and serve.

INGREDIENTS
3 BONE IN SKIN ON CHICKEN THIGHS
2 chicken legs
1 tsp oregano
salt & pepper to taste ( i used about, slightly less than 1 tsp salt and 1/2 tsp pepper to season the chicken.)
1/2 Tbs olive oil to season the chicken
1 medium onion
4 huge cloves of garlic
a handful of freshly chopped parsley
1 cup of baby carrots
4 large gold potatoes
2 Tbs olive oil, to sear the chicken
1 Tbs butter
1/2 cup honey
1/3 cup sweet chili sauce
3 Tbs soy sauce
2 Tbs lemon juice
1 Tbs brown sugar
1 Tbs dijon mustard

Tequila Lime Glazed CHICKEN WINGS | Grandma Bessie's House
Chicken wings are the perfect crowd-pleasing recipe. You can make chicken wings for dinner, a party, holiday event, game day or just because. Today we are cooking our Tequila Lime Glazed Chicken Wings. Our oven baked chicken wings have moist, tender meat with sticky and crispy skin. Plus, since they are baked in the oven, these wings are healthier than deep fried chicken wings.

TEQUILA LIME GLAZED CHICKEN WINGS
for the Tequila Lime Glaze/Sauce
3/4 cup limeade, from frozen concentrate, thawed
1/3 tequila
1/8 - 1/4 cup honey
1 tsp cornstarch
1 tsp water
zest of one lime
1/4 tsp crushed red pepper flakes
for the chicken wings
1 1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp celery seed
1/2 tsp salt
1/4 tsp chipotle chili powder
2 Tbsp baking powder
16 - 20 chicken drumettes
serve with fresh veggies and/or fries
for the Tequila Lime Glaze/Sauce
1. In a saucepan, bring limeade, tequila and honey to a boil. Reduce heat and simmer until sauce reduces to 3/4 cup, about 8 - 10 minutes.
2. Combine cornstarch and water in a small bowl. Add cornstarch mixture to sauce, stirring constantly with a whisk. Bring back to a boil and cook 1 minute, stirring constantly. Remove from heat and stir in lime zest and red pepper flakes. Set aside. Sauce will thicken as it cools.
for the chicken wings
1. Preheat oven to 425°F. Line a baking pan with aluminum foil. Place a wire baking rack on top and spray it with nonstick spray.
2. In a small skillet, over medium heat, toast spices until fragrant, 1 - 2 minute. DO NOT ALLOW SPICES TO BURN! Remove from heat and set aside to cool. Mix toasted spices in a bowl with baking powder. Sprinkle seasoning over wings and toss to evenly coat.
3. Place drumettes in a single layer on wire rack, skin side up. Bake while turning every 20 minutes until crispy and browned, between 50 - 60 minutes. Remove from oven and allow wings to rest for 5 minutes. Cover wings with sauce and serve with fresh veggies and/or fries.
