How To make Lemon/Raisin Cookies
3/8 c Butter
3/4 c Sugar
1 Egg; well beaten
3 tb Lemon juice
1 1/2 c Cake flour
Grated rind 1 lemon 1/2 ts Baking powder
1/8 ts Baking soda
1/4 ts Salt
1/2 c Chopped raisins
Cream butter and sugar. Add egg. Add lemon juice and rind. Sift flour, measure, and sift with baking powder, baking soda, and salt. Add to first mixture. Add raisins. Mix thoroughly. Turn onto lightly floured board. Roll in sheet 1/8 inch thick. Cut with floured cutter. Place on slightly oiled baking sheet. Bake in hot oven (425 F) 10-12 minutes. 24 servings -----

Preheat Oven to 190C fan assisted (210C non fan)
230g Cold Unsalted Butter

In this video I am going to show you how to make a Lemon and Raisin cookie as a favourite eatable treat. Ingredients:
150g / 1.5 cups all-purpose (plain) flour
1/2 teaspoon baking powder
1 pinch salt
110g (0.5 cup) superfine (caster) sugar
110g (0.5 cup) softened butter
1 egg, beaten
Finely grated zest of 1 lemon
150g (1 cup) raisins
Instructions:
1: Heat the oven to 190°C / 375°F / Gas 5. Line 2 large baking trays with non-stick baking paper.
2: Sift the flour, baking powder and salt into a mixing bowl.
3: Beat in the sugar, butter, egg and lemon zest until well blended. Stir in the raisins.
4: Drop spoonfuls of the mixture, well apart, on the baking trays. Bake for 15 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
