How To make Lamb Enchiladas
Ingredients

pound
lamb, ground
1
each
onion, chopped
14 1/2
oz
tomatoes, can, diced, drained
15 1/4
oz
kidney beans, red, can, drained
8
oz
mushrooms, fresh, sliced
8
oz
salsa, jar
12
each
flour tortillas, 8 inch
2
cup
cheddar cheese, shredded
Directions:
Preheat oven to 350 degrees F (175 degrees C). Saute lamb and onion in a large skillet over medium high heat for 4 to 5 minutes; when lightly browned, stir in tomatoes, beans and mushrooms. Add 1/2 of the salsa and cook all together until heated through.
Spoon mixture onto tortillas, dividing evenly; roll up tortillas and place in a lightly greased 9x13 inch baking dish. Spread remaining salsa over the top and sprinkle with cheese.
Bake for 30 minutes, or until cheese is melted and bubbly.

Ingredients:
(For the beef)
-2 carrots large chopped
-2 onions large chopped
-3 cloves garlic
-4 chile Guajillo
-pepper to taste
-tablespoon Cumin
-two tablespoons tomato paste
-1/2 cup cherry brandy
-1 quart chicken stock or to cover
-4-6 short ribs
-salt to taste
-canola oil for sautéing
-flour for Coating ribs

This week we're celebrating the 200th episode of Binging with Babish with...a pretty normal episode, since I didn't realize it was the 200th until someone pointed it out to me on Reddit! So we'll just pretend that I wanted to be lowkey about it. I had been looking forward to this one for a while, mostly because well, I love enchiladas. The Rose family recipe involving the folding of cheese could only mean one thing: a queso drizzled over top the spicy little parcels before getting all browned and bubbly in the oven. Sign me up.

⭐️ HOMEMADE ENCHILADA SAUCE 2 WAYS
INGREDIENTS
1 lb lean ground meat of choice
2 tsp light chili powder
1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder
