How To make Japanese Fruitcake
CAKE:
1 c Butter
2 c Sugar
4 Eggs
3 c Flour -- all-purpose, sifted
2 ts Baking powder
1 c Milk
1 t Vanilla extract
1 t Ground cloves
1 t Ground cinnamon
1/2 c Raisins
1/2 c Pecans chopped
Pecan halves for garnish :
FILLING/FROSTING 2 1/2 c Sugar
3 tb Flour :
all-purpose
1/2 ts Salt
1 c Water boiling
1 1/2 tb Lemon zest :
grated
1/4 c Lemon juice fresh
4 1/2 c Coconut :
grated
For cake: Grease and flour four 9- inch round cake pans. Cream butter; gradually add sugar, beating well at medium speed with an electric mixer. Add eggs one at a time; beat well after each addition. Combine flour and baking powder; add to creamed mixture alternately with milk, beginning and ending with fbur mixture. Mix after each addition. Stir in vanilla. Divide batter in half; stir spices, raisins and pecans into one half. Pour plain batter into 2 of the cake pans and spiced baUer into the other 2 pans. Bake at 350 degrees for 20 to 25 minutes or until cake tests
done . Cool in pan for 20 minutes; remove from paos and cool completely on wire racks. Prick layers at 2-inch intervals with a wooden pick. Spread frosting/filling between layers and on top and sides of cake, stacking layers with a light layer on top of each spice layer. Garnish with pecan halves, if desired. For filling/frosting: Combine sugar and flour in medium saucepan; stir in remaining ingredients. Bring to a boil over medium heat, stirring constantly. Cook for 5 minutes or until thickened, stirring constantly; cool mixture completely before filling and spreading on cake. Nutritional analysis por serving: 741 calories, 32 grams fat, 112 grams carbohydrates, 115 milligrams cholesterol, 406 milligrams sodium, 38 percent of calories from fat . ** Fort Worth Star Telegram Food section :

For the filling:
1 cup whole milk
2 cup Granulated Sugar
2 medium Oranges, zest from one, juice and segments from both.
2 cups Coconut, grated
2 Tablespoons Cornstarch
¼ cup cold water

Happy National Fruitcake Day! (12/27/19)
This is a video of my dad and I making a Japanese Fruitcake in the memory of my late great-grandmother, Granny. It was her favorite Christmas dessert (and trust me, she made a lot of good desserts). I'm not sure why it is called a Japanese Fruitcake, because it's not Japanese, and it's not really a fruitcake. It's a nice, moist spice cake with nuts, raisins, and a delicious coconut-lemon icing.
By the way, the man telling the story at the end is my great- grandpa. He's going to be ninety this April.

Moist Fruit Cake recipe that is super moist and chunky! This is my recipe for an alcohol free fruit cake that is perfect for Christmas! This is a kid-friendly fruit cake since this fruit cake is alcohol free.
This fruit cake requires a lot of ingredients and spices, but since we are home bakers, you can use whatever is available to you. You can add nuts and fruits of your choice. This is just a guide and whatever I have added on this fruit cake, that is what our budget allowed. :)

These are the ingredients of the alcohol-free fruit cake (in order):
1 cup butter
1 cup brown raisins
1 cup golden raisins
1 cup dried canberries
1/2 cup brown sugar
3 tbsp molasses
1/2 cup fresh orange juice
1 3/4 cup flour
1 tsp nutmeg
1 tsp cinnamon powder
1 tsp of all spice
1/2 tsp of ginger powder
A pinch of salt
1 tsp baking powder
1 whole zest of lemon
1 whole zest of orange
2 cups of mixed fruits
1 cup of glace cherries

Super moist fruit cake Complete Written Recipe:
This fruit cake is a simpler and easier version of making a traditional fruit cake or old-fashioned fruit cake.
In this Easy fruit cake recipe we don't need any soaking of dry fruits; but still the raisins,candied peels,cranberries and other dried fruits will be juicy and plumpy as they are boiled in liquid and then added into the cake batter.
This video will show you one of the least messy ways that we can make a fruit cake.We don't need any stand mixer/hand mixer to make this cake.A sauce pan and a wooden spoon are the only major tools to make this fruit cake.
In two steps we can make this super moist fruit cake batter.
Step1:
Boil the dry fruits in a sauce pan with butter sugar and water.
Step2:
Add all the rest of ingredients into this saucepan after its cooled.
Step3:
Bake the fruit cake @ 320 F for 75-90 minutes.
The cake is so soft and moist and the aroma of spices makes this fruit cake, more flavorful.
This fruit cake recipe is one of my favorite recipes to make moist fruit cake.
