How To make Jamaican Chicken
4 Chicken breast halves
(4 oz each) :
skinned, boned 2 1/2 tb All-purpose flour
1 tb Flaked coconut, minced
1 ts Curry powder; divided
1/2 ts Salt
1/4 ts Pepper
1 Egg white; lightly beaten
Vegetable cooking spray 2 ts Reduced-calorie margarine
divided 1 md Banana; cut into 1/2" slices
3/4 c Unsweetened pineapple juice
3 Green onions; cut diagonally

into 1/4" pieces 2 c Cooked long-grain rice
-- (cooked w/o salt or fat) Place the chicken between two sheets of heavy-duty plastic wrap and flatten to 1/4" thickness, using a meat mallet or rolling pin. Combine the flour, coconut, 1/2 teaspoon curry powder, salt and pepper; stir well. Brush both sides of each chicken breast with the egg white; dredge in the flour mixture. Set aside. Coat a large nonstick skillet with cooking spray; add 1 teaspoon of the margarine. Place over medium-high heat until the margarine melts. Stir in the remaining curry powder. Add the banana and saute two minutes or until the banana is lightly browned. Remove the banana from the skillet and set it aside. Wipe the drippings from the skillet with a paper towel. Coat the skillet with cooking spray; add the remaining margarine. Place over medium-high heat until the margarine melts. Add the chicken and cook two minutes on each side or until browned. Add the pineapple juice and green onions. Cover, reduce the heat and simmer ten minutes or until the chicken is tender. Serve over the rice. Garnish with the banana slices. Curried Chicken/How to make Curry Chicken, Jamaican Style.
This recipe of Curried Chicken is one of the best tasting. It’s real simple, packed with bold flavors.
Green Seasoning
Ingredients
Chicken 2-3 1bs
2-3 tbsp Curried Powder
1 tbsp Jerk Seasoning (optional)
1-2 tbsp all purpose Seasoning
1 tsp black pepper
1/2 tbsp salt
2-3 tbsp Green Seasoning
Carrot (chopped)optional
Potatoes (diced) optional
2 twigs of scallion & thyme
2-3 pimento peppers (for flavor)
Scotch bonnet pepper (optional)
(Burning of Curry)
1 tbsp curry powder
4 gloves garlic (chopped)
half an onion (chopped)
2-3 tbsp cooking oil
Cooking time about 20- 25 minutes
Ps: This recipe is to use as a guide, taste and adjust.

Oven Jerk Chicken Recipe
Ingredients List

2kg chicken legs
1 tsp sea salt
2 tsp black pepper
1 tsp all purpose seasoning
1/2 tsp all spice
1 tsp ginger
1 tsp oil
1-2 tbsp green seasoning
2-3 tbsp jerk seasoning
1/2 tsp gravy browning
Bake for 1hr. 5 minutes on 200•C for 30 minutes then tilt the tray to one side and pour the juices into a bowl. Pour onto the chicken and bake for a further 25 minutes. In the last 10 minutes turn up the heat to 250• so it can char slightly mimic the jerk chicken look.
Always taste and adjust seasonings as my recipe acts only as a guide. Individual tastebuds are different and substitutions can be made throughout.) Terri

1 tbsp Dry Jerk Seasoning (Chief Brand) or any kind of your choice
2 tsp salt
3-4 tbsp wet jerk seasoning
1 tsp browning
Homemade Jerk Marinade
Cooking time 1 hour 20 minutes
Oven temperature 200 degree, 250 degree for the last 15 minutes to acquire the Char Jerk effect.
