How To make Irish Potato Pancakes
1 c Mashed potato
2 c Flour
1 ts Salt
1 Tbpp baking powder
2 Beaten eggs
1 c Milk
4 tb Light corn syrup
1 tb Nutmeg
Do not expect these to be like American pancakes, but they have an excellent flavor. Mix all ingredients. Beat well. Bake on a greased griddle until brown on both side. Makes 8-10. Origin: Hearth and Home Companion Shared by: Sharon Stevens.

Irish Boxty: Potato Pancakes
2 Cups All-Purpose Flour
1 teaspoon Baking Powder
1/4 teaspoon Kosher Salt
1 Cup Russet Potatoes, boiled in salted water and mashed (8 oz)
1 1/2 Cups Russet Potatoes, peeled & grated (8 oz)
1 Cup Buttermilk (or more if needed)
1 Tablespoon Unsalted Butter for the griddle
1 Tablespoon Chives, chopped for garnish
¼ Cup Sour Cream, for garnish
1.In a small saucepan add 8 oz of russet potatoes and cover with water, bring to a boil and boil for 15 minutes, with a potato masher mash the hot potatoes in a medium bowl, set aside
2. In a small bowl stir together with a spoon the flour, baking powder and salt, set aside.
2.In a large mixing bowl, combine the mashed potatoes with the grated raw potato, then add the flour and mix well with a wooden spoon, add the buttermilk and stir gently, you are looking for a thick batter almost like a quick bread.
3. Heat a nonstick frying pan over medium heat, and add a teaspoon of butter, scoop out some of the boxty batter onto the pan with an ice cream scoop, flatten and shape into a round pancake until golden brown on the bottom, flip over with a spatula and continue to cook until golden brown, turning the heat down to ensure that the potatoes are cooked through. Serve on a plate with a dollop of sour cream and sprinkle with chives.

Ingredients and recipe:
1 potato (200g)
Dice the potato
Place in a pot
Water
Cook for 15 minutes on medium-high heat
Drain the water
Mash the potatoes
1 onion
Slice the onion
50g carrot
Shred the carrot
Medium heat
Olive oil
Cook for 2 minutes
Add the carrot
Cook for 3-5 minutes
Add to the mashed potato
Mix well
1 egg
2tbsp flour
30g parmesan cheese
10g parsley
Salt
Black pepper
Paprika
Mix well
A bit of oil
Scoop some potato and shape it into a ball
Coat in bread crumbs
Medium heat
Vegetable oil
Place the patties in the pan
Fry for 3-5 minutes
300g cucumber
Thinly slice the cucumber
1tsp salt
Let sit for at least 10 minutes
Flip over and fry for another 3 minutes
Done!
2tbsp sour cream and 1tbsp mayonnaise
8g dill and 2 cloves of garlic
Mix well
After 10 minutes
Squeeze out the exceed liquid
1tbsp soy sauce
1/2tsp rice vinegar
1/2tsp white sugar
1/2tsp sesame oil
A pinch of salt
Mix well
Dice some ginger
1tsp ginger
1tbsp white sesame seeds
Roast for 3-5 minutes on low heat
Add to the cucumbers
Mix well
So crispy and delicious!
Super delicious with the sauce and cucumber salad!

Celebrate St. Patrick’s Day this weekend and use up some leftover mashed potatoes by making this traditional Irish potato pancake!
2 medium potatoes, grated
2 c. flour
1 tsp. Baking powder
1 tsp. Salt
1 c. mashed potatoes
1 ¼ c. buttermilk - maybe more if batter is too thick
Butter for the pan
Combine flour, baking powder and salt in a small bowl and set aside.
In a large mixing bowl, combine grated potato and mashed potato. Add the flour and mix well.
Slowly add the buttermilk, being careful not to overmix. It should be a thick, firm batter. Add more buttermilk if needed.
Heat a frying pan on medium and add a pat of butter. Add a generous scoop of batter and flatten into a big pancake. Fry until golden brown on both sides.
Add more butter and repeat until the batter is finished.
Enjoy with either sweet or savory toppings. Some like their boxty with sour cream and scallions, others with more butter and jam. It’s also a delicious part of a traditional Irish breakfast.
