How To Make Authentic Satay Peanut Sauce – Melissa’s Home Cooking
This recipe makes up to a litre of Satay Peanut Sauce.
This traditional and authentic Satay Peanut Sauce is so versatile! There are so many recipes that you can use it in from bbq chicken satays, chicken satay burgers, chicken satay pizza, satay chicken pasta to wraps, and even noodles or curries! This sauce is a winner every time and tastes delicious!! It is my family’s favourite sauce and it is also great as a dipping sauce for bbq meats!

Ingredients:
500 g blanched peanuts – roasted
½ cup cooking oil
3 tbsp light soya sauce
3 tbsp sweet soy sauce, Kecap Manis (ABC Brand)
3 ½ tbsp sugar
¼ tsp salt
2 ¼ tbsp tamarind pulp, soaked in 1/2 cup water for 15 minutes, squeeze the tamarind pulp for juice and discard the pulp
2 ¼ cups water
For the Spice Paste
15 dried red chilies, seeded and soaked in warm water for 15 minutes
6 cloves garlic - chopped
6 shallots - chopped
4 lemon grass – chopped
2 ¼ tbsp coriander powder
½ cup water
Directions:
1.In a food processor or mortar and pestle, crush the roasted peanuts coarsely and set aside.
2. Soak the tamarind pulp in ½ cup of water for 15 minutes and squeeze the tamarind pulp for juice and discard the pulp. Set aside.
3. Next, soak the dried red chilies in warm water for 15 minutes, then take out the seeds and chopped in smaller pieces, ready for blending.
4. In a blender, add all the spice paste ingredients and blend until fine.
5. Heat a pot on medium high and add cooking oil. Add the spice paste and fry until aromatic and smell spicy, about 5 minutes.
6. Then add the sauces, sugar, salt, peanuts, tamarind juice, water and stir thoroughly.
7. Simmer in low heat while continue stirring for about 3 minutes until the peanut sauce boiled and turns smooth. Add more seasonings if needed, eg salt and sugar to taste.
8. Set it aside and let the sauce cool down.
9. Transfer the sauce to an air tight container or jar.
10. This Satay Peanut Sauce can be kept in the fridge for at least 4 weeks or in the freezer for 3 months.

Notes:
For roasting the peanuts
Bake blanched peanuts at 150C for 10-15 minutes or until golden brown. Leave aside and let it cool before using.
To make the sauce spicier and Hot
Add more red dried chilies or chilies powder

1 cup water or milk, almond milk, coconut milk
1/4 cup hoisin sauce
1/2 cup peanut butter (chunky or smooth)
1. Bring over some heat and stir stir stir!

Peanut Noodles - You Suck at Cooking (episode 149)
Peanut noodles are a dish that's made with both noodles and peanut butter. As well as several other ingredients which also end up on the noodles and then end up inside your mouth. if you're doing it right.

2 Tablespoons peanut butter (lets be real I used 3)
1 Teaspoon soy sauce
½ Tablespoon rice vinegar
½ teaspoon sesame oil (let's be real I used a full teaspoon like a badass)
½ teaspoon sugar (I made it once without the sugar and it was still good)
1 teaspoon of chili oil (let's be real that's exactly how much I used)
2 cloves or garlic chopped finely
Wangjangle all of those things together
Add 2 or 3 tablespoons of hot water which you can add now or later. I added it just after the noodles finished cooking so that the sauce would be hotter going in
Boil 200 grams/7 ounces noodles. I used a bit less because I like my noodles drowning in sauce. That's also the reason I used more of all the other ingredients.
Then combinate those things and then also eat them.
How to make 'Gado-Gado' (Indonesian salad with peanut sauce)
Gado-Gado
Said to have originated in Western Java, gado gado is one of Indonesia’s most popular dishes. It can be found anywhere from street hawker stands, food stalls, warungs, restaurants, and hotels. Literally translated as “mix mix”, gado-gado is a traditional Indonesian salad made with blanched vegetables, tofu, tempeh, eggs, and pecel (peanut sauce). There is no doubt that the star of the dish is the pecel. You can substitute the vegetables with what you have available, but the pecel is what makes a gado-gado.
Ingredients:
Salad
Bean sprouts
Cabbage cut in to wedges
Tofu cut into cubes
Tempeh cut into cubes
Carrots cut into batons
Long beans cut into matchsticks
Japanese papaya leaves
Bitter gourd thinly sliced
Potatoes cut into cubes
Tofu and cut in to cubes
Tempeh cut in to cubes
Blanch all ingredients above in salted water until lightly cooked. When the vegetables are reach this stage, immediately place them in an ice water bath to stop the cooking process and ensure the vegetables retain their crunch and vibrant colors. After they have cooled down, drain and set aside. You can you any blanched vegetables you like.
Garnish
Crispy fried shallots
Boiled egg wedges
Emping melinjo
Pecel (peanut sauce)
1 Tbsp sliced aromatic ginger
2 Tbsp thinly sliced red chillis
2 Tbsp sliced garlic
1 Tbsp sliced ginger
1 Small hot chilli
1 Cup fried peanuts with skins
1½ Cup water
1 tsp palm sugar
1 tsp finely chopped kaffir lime leaves
2½ Tbsp Kecap manis (sweet soy sauce)
1 tsp salt
Fry the ginger, red and hot chillis, garlic, and shallots over medium heat until tender and caramelized. Once done, place the spices on a motar and pestle and add the peanuts. Grind these together until you get a rough paste like consistency.
Add ½ cup water to the mortar and pestle to make a smoother paste. When you get a smooth paste, transfer the mixture to a sauce pan and add another cup of water. Mix thoroughly until you get the paste incorporated with the water. Add the kecap manis, and stir until mixed thoroughly. Bring the sauce to a boil and then reduce to medium heat and simmer for 10 minutes stirring occasionally. Once sauce has thickened, remove from the heat and let cool.
Arrange the blanched vegetables on a plate with the tofu, tempeh, and boiled egg wedges. Top with the pecel (peanut sauce) and garnish with crispy fried shallots and fresh slices of tomatoes.
