The perfect fall recipe for your family to nestle in as the temperature drops and you want to feel homey and warm. I serve this with a veggie-packed quinoa salad, but you can put this with the side and salad of your choice. By the way, the salad is GREAT as a leftover (with eggs on top for Breakfast or Lunch). Paleo / Keto friendly recipe. Low-carb.

JENNIE’S SKILLET ROASTED LEMON ROSEMARY CHICKEN
Roasted in a cast-iron skillet, this chicken recipe is the most requested one in my household and with my mother-in-law. Cooking the thighs with the bone and skin-on gives tremendous flavor. You can take the skin off before eating if you want. I like to serve this with a quinoa salad or with crusty bread and a salad for catching the sauce.
Serves 5
1 lemon cut into thin slices
1 large yellow onion sliced
2 cloves garlic- chopped
5 bone-in, skin-on, chicken thighs
1/3 cup olive oil
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
1 and ½ teaspoon kosher salt
1 teaspoon ground pepper
½ cup white wine of your choice
-Preheat oven to 450; bring a cast-iron skillet or large oven-safe skillet to counter.
-Slice lemon and onion- layer lemon and then onion on bottom of skillet.
-Chop garlic and nestle into pockets between lemon and onion.
-Pat chicken dry with paper towels- place skin down in skillet on top of lemon and onion.
-Mix olive oil, rosemary, thyme, salt and pepper in small bowl. Using your hands, scoop oil and herb mixture (getting salt from bottom) and spread evenly over both sides of chicken leaving it skin side up.
-Set a timer and bake in preheated oven for 30 minutes. Take skillet out- careful it’s hot- and pour ½ cup of white wine around the chicken. (Careful not to pour onto the chicken- it will cause chicken not to brown as well.)
-Cook for 15 more minutes. Take out of oven and let rest for 10 minutes before serving. Serve with pieces of onion and some of the sauce.
JENNIE’S QUINOA SALAD
This flavorful veggie-packed side serves eight people. I love to eat the leftovers for days with eggs on top for breakfast or lunch.
Serves 6-8
1 cup uncooked quinoa cooked per directions on the package. I like to use some chicken broth with the cooking liquid to add more flavor.
1 (15 oz) can garbanzo beans, rinsed and drained
1 medium cucumber, chopped
1 medium yellow bell pepper, chopped
1 pint cherry tomatoes, sliced in half
¾ cup chopped red onion
1 cup finely chopped parsley
¼ cup olive oil
¼ cup lemon juice – (2-3 lemons)
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
2 cloves garlic, minced
½ teaspoon kosher salt
Freshly ground pepper to taste
-Cook the quinoa per instructions. While cooking, mix the beans, cucumber, bell pepper, tomatoes, onion, and parsley in a large bowl.
-In a jar with a lid or small bowl mix the olive oil, vinegar, mustard, garlic, salt and pepper and shake or whisk to combine.
-Pour the cooked quinoa into the veggies in the bowl; add the dressing, and mix to combine. Enjoy!

Roasted Rosemary Honey Chicken Shopping List:
1. 1LB Leg Quarters
2. 1 TSP olive oil
3. 1 TBSP fresh Rosemary
4. 1 lemon sliced
5. 1 TBSP honey
Roasted Rosemary Honey Chicken Recipe:
1. Preheat oven to 425
2. Line baking dish with aluminum foil and 1 sliced lemon
3. Drizzle 1 TSP on chicken and rub in
4. Season with salt & pepper
5. Sprinkle 1 TBSP fresh rosemary and rub in
6. Place the chicken on top of the lemons
7. Drizzle 1 TBSP honey
8. Bake the chicken in the preheated oven for 40 to 50 minutes, or until the chicken registers at least 165 F on a food thermometer.*
9. Enjoy kittens!!

Welcome to Simply Delicious Kitchen channel..Today's video is a simple recipe of preparing honey,lemon, rosemary marinated chicken
Ingredients used
Full chicken
1 tsb turmeric powder
1 tsb paprika powder
1 tsb black pepper
1tsb Ginger garlic paste
4-5 tablespoons Honey
2 tsb Soy sauce
1 satchet tomato paste
Salt to taste(just a pinch)this can be optional if you don't take alot of salt
1 Lemon ????
1 tsb cooking oil
Rosemary leaves
Preparation
• Wash the chicken
• Add all the spices and massage into the chicken until fully mixed
• Add cooking oil and mix then cover and leave to rest for 45 mins. you can refrigerate overnight if you have time.
• Pour the chicken into a cooking pan
• Add Rosemary leaves
• Cover and let it cook on medium heat for about 15 mins
• After 15 minutes turn the chicken to the other side and let it cook for another 15 minutes
• Garnish with Rosemary and serve with an accompaniment of your choice
• Enjoy!!!!
