Easy fruit cake| Boiled fruit cake recipe
Ingredients:
Batter:
All purpose flour ( Maida) - 2 cups ( 260 g)
Unsalted Butter- 185 g
Brown sugar -1 cup tightly packed (210g)
Eggs-3 ( medium) At room temperature
Baking powder-1 teaspoon
Baking soda-1/4 teaspoon
Salt-1/4 teaspoon
Zest of 1 orange
Zest of 1 Lemon
Vanilla essence-1 teaspoon ( optional)
Water-1/2 cup
Orange juice-1/2 cup + extra 1/4 cup for brushing
Dry fruits & Nuts:
Raisins-200 g ( 1 cup)
dried cranberries - 100 g
Tutti fruiti-100 g
Walnuts ( chopped) - 50 g
Almonds ( chopped) - 50 g
glazed cherries-100g
crystallized ginger-1 teaspoon ( optional)
You can use the nuts and fruits as per your choice and availability.
Spices:
Cinnamon stick-2 or 3 sticks
Cloves-6-7
Cardamom-6-7
Nutmeg-1/2 of a small one
Sugar-1 tablespoon
You can adjust the quantities as per your taste
Baking Pan:
8 or 9 inch pan . Grease with butter and line with parchment paper. Since this cake needs a long time baking , lining the sides with baking paper is highly recommended. I used 2 sheets for the bottom for preventing the over browning.
Baking Time:
Preheat the oven at 160C for 10 minutes. Bake at 160C for 45 minutes. After that reduce the heat to 150C and bake for 35-40 minutes more. Oven temperature may vary, so check your cake after 60 minutes of baking.

Sugar – ½ cup (approx. 100 gm)
Water – ¼ cup (Hot Water)
Unsalted Butter – 4 tbsp (Remove this quantity of butter from the 125 gm mentioned for the CAKE batter below)
TIP: Please cool the prepared caramel sauce before adding to the cake batter. If the caramel sauce is hot it will cook the eggs in the raw cake batter.

All-Purpose Flour – 350 gm (approx. 2 ½ cups)
Large Eggs – 3
Vegetable Oil (Flavourless) – 100 ml ( ½ cup)
Unsalted Butter – 125 gm (melted) (Remove 4 tbsp from this for the CARAMEL SAUCE mentioned above)
Sugar – 350 gm (approx. 1 ½ cups)
Baking Soda – 5 gm (1 tsp)
Baking Powder – 5 gm (1 tsp)
Vanilla Sugar – 9 gm (approx. 2 tsp) OR Vanilla Essence – 2 tsp
Pinch of Salt
Soaked Mixed Fruit – 750 gm (approx. 3 ½ cups) ( Remove the fruit juice and drain it from the dried fruits. Toss the drained fruits with 2 tbsp of flour. Use the flour from the 350 gm flour mentioned for the cake. Please don’t add additional flour).
