91 year old Maria shares her lasagna recipe with Pasta Grannies!
Maria passed away on 12 December 2021 aged 92; this video was made in 2020. She made this lasagna for her customers to take away. Over the years she adapted the recipe and the result is a green lasagna, layered with a pork ragù and béchamel sauce. This is Maria's second appearance for Pasta Grannies!
Adjusted to feed 4 -6 people:
For the pasta:
● 250 g 00/plain flour
● 110 g eggs
● 30 g fresh spinach, leaves only
For the ragù:
● 2 garlic cloves
● 3 sage leaves (wrapped in muslin)
● 200g unsmoked pancetta, diced
● 1.5 kg minced pork (loin or shoulder)
● 1.5 litre beef stock
1 heaping tbsp of tomato paste
400 g passata
● Salt, pepper
For the béchamel:
● 30 g butter
● 30 g flour
● 1/2 litre whole milk
● 1/2 a nutmeg, grated
● For sprinkling: 50g Parmigiano (or more, if you feel like it)

Today my 6-year old grandson Colten is joining me in the kitchen and we're making a keto friendly low carb lasagna, trying out Palmini pasta substitute. These are just clean hearts of palm slices packed in water and sea salt and only 2 net carbs per serving! I have used the palmini spaghetti before and we really like this so I was excited when my daughter found these on clearance at Walmart. ... and Let me tell you that this lasagna turned out absolutely delicious and I'll never make lasagna using regular pasta again! Even my husband (who many of you know is a junk food junkie) said it was really good and he liked the noodles. If you didn't know, you would probably think it was an al dente pasta and it's great because it just takes on the flavors that you cook with it. I stored the leftovers in the fridge, just covered the pan in foil. Let me tell you what, this was even better heated up on Day 2 for dinner as the flavors had really filled the dish! So yummy! I'll be sure and list the full recipe below.

Recipe:
1-2 Cans Palmini Lasagna (depending on how thick you layer it)
1 Jar Low Carb Marinara (I use the Aldi brand Specialty Premium for 4 net carbs/half cup)
1 # ground beef
1/2 C Diced onion
1 tsp Italian Seasoning
Salt & Pepper
2-3 pkt sweetener (optional if you like a hint of sweetness in your sauce)
8 oz. ricotta cheese
1/3 C grated parmesan
1 tsp parsley
1 Egg
4 Slices Smoked Gouda
2 C Shredded Mozzarella
Directions: Preheat oven to 350 degrees
Boil palmini for 10 mintues (add a little garlic powder to water), then drain. Meanwhile, mix up ricotta cheese, parmesan, parsley and egg, set aside. Brown ground beef and onion in a skillet, add salt, pepper and Italian seasoning. When fully cooked, drain meat. Then add almost the full jar of sauce but reserve a little for the bottom of the pan. Heat the sauce & meat mixture and if you like a little hint of sweetness to your sauce, add in a couple packets of sweetener. Now it's time to layer up the lasagna. Take a 7 x 11 glass baking dish (NO need to spray or grease). Add the leftover sauce from the jar to the bottom of the pan until it's just scantly covered. Now layer in your palmini. Next add the meat sauce to cover. Then add the entire ricotta cheese mixture to this layer then sprinkle 1 C mozzarella on top. Now add another layer of palmini. On the second layer I overlapped more to get a thicker pasta effect. Then layer 4 slices smoked gouda on top of the palmini (this really helps give it the real pasta look and feel). Add more sauce on top to cover. Sprinkle sauce with grated parmesan and finish with the remaining cup of mozzarella on top (or more if you prefer). Cover with foil and bake at 350 for 30 minutes. Then increase temp to 375, uncover and bake another 20 minutes or until melty and bubbly. Let rest for 5-10 minutes before slicing. Then serve and enjoy!

Ingredients:
- 2 lb ground beef
- 1 cup diced onion
- 2 tsp salt
- 3 cloves garlic, minced
- 3 tsp dried basil
- 1/2 tsp red pepper flakes
- 6 oz tomato paste
- 2 cups tomato sauce
- 10 oz lasagna noodles (10-12 noodles)
- 30 oz ricotta cheese (2 15-oz containers)
- 2 eggs, beaten
- 8 oz Parmesan cheese, grated (reserve 1/2 cup)
- 1 lb mozzarella cheese
- 1/4 cup parsley
- 1/2 tsp pepper
- 1 tsp salt
Instructions:
In a large 12-inch skillet, heat 1 tbsp olive oil over medium-high. Saute the onion with 1 tsp salt until soft and translucent, 6 minutes. Add the garlic and saute for 30 seconds. Add the ground beef. Break up the beef and cook until browned, 8-12 minutes. Add salt, red pepper flakes, dried basil, tomato paste, and tomato sauce. Simmer for 8 minutes. Remove from heat and set aside.
In a large bowl, combine the ricotta cheese, eggs, Parmesan cheese, pepper, 1 tsp salt, and parsley. Mix all ingredients.
Cook lasagna noodles al dente with six quarts of water. Once boiling, add ¼ cup of salt. Cook for 8-11 minutes. Drain and set aside.
Grease a 9×13 pan well. Star by layering ½ cup of the red sauce evenly on the bottom of the pan. This will be a very thin layer but helps the pieces come out of the pan when removed. Layer noodles in the pan, slightly overlapping. The noodles may not be long enough for the pan, so a noodle may need to be cut to fit. Spoon half the ricotta mixture on top of the noodles. Next, add a layer of half the meat and red sauce. Layer on half a pound of mozzarella cheese. Repeat the layering, starting with the noodles. Finish with the remaining half pound of mozzarella cheese and reserved parmesan cheese.
Note: At this point, the lasagna can be covered up tightly and frozen for up to one month. When ready to bake, let thaw in the refrigerator for eight hours.
Bake at 350°F for 45 minutes, bubbling throughout the lasagna. Once baked, cool for 15 minutes before cutting into pieces.

Ingredients
-500 grams Zorabian Lahori Marinates
-8 Tomatoes
-10 Garlic finely chopped
-4 Tablespoon of White Sauce
-4 Cheese cubes
-8/ 10 bread Slices
-Salt,Sugar,Pepper & Oregano as per taste
-Oil/ Butter for cooking
Method
1.Heat water & Blanch the tomatoes for 10 min with Slit on back
Let it cool ..remove skin and blend in mixer
(For Red Sauce) Heat oil put 8 to 10 finely chopped garlic...Then put tomato puree.Add salt,sugar & pepper as per taste ...Cook for 5 minutes
2.Cut Marinates in small pieces and cook in hot oil
3. For White Sauce
- 2 TSP Maida,2 TSP Butter,1 Cup milk....Combine and cook ...with salt pepper & Sugar
4.Preheat Oven for 180 Degree C for 10 Minutes

Take a big Kadhai fill in some salt and heat on gas covered ur gas oven is ready
5.Take bread slices..cut ends and with a rolling pin roll it to make it longer and thiner
6.Take a baking tray grease it with butter
First put Red Sauce,then White Sauce,Spread Cooked Lahori Chicken
Then place bread slices..
Again repeat the sauce & chicken method
Cover with Greated cheese & Oreganao
7.Place The dish in Oven 30 Min at 180 degree C
Gas oven 45 min covered on Medium flame
