Tuscan Chicken | The Ultimate Chicken Dinner?
Packed with flavour, my Tuscan Chicken in Creamy Sun Dried Tomato Sauce is the ultimate chicken dinner. Serve with pasta, potatoes or just a big hunk of bread to dip into that creamy sauce.

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

Zesty Rice Bowl - HOMESTYLE LEMON CHICKEN AND RICE | Recipes.net
This home-style lemon chicken recipe is a refreshingly different take on chicken and rice meals! This well-seasoned tender chicken breast is given an amazingly rich flavor of zesty with a hint of buttery flavor and aroma that are best paired with some greens and rice! This recipe is quick and easy, perfect for family lunches and dinners, and are good filling meals that also provide protein and carbs on top of the greens for even healthier plates!

Ingredients:
1 lb boneless & skinless chicken breasts, cut into big strips
2 tbsp olive oil
½ cup yellow onion, diced small
1 pc, 5 oz red bell pepper, chopped
4 tbsp unsalted butter
2 garlic cloves, minced
⅓ cup all-purpose flour
½ cup chicken broth
1 tbsp lemon juice
2 tbsp fresh parsley, chopped
½ cup long-grain rice, uncooked
1 cup canned corn kernels, drained
Salt & ground black pepper to taste
Zest from 1 lemon

0:10 Season the chicken breasts with salt and pepper then lightly coat the chicken pieces in flour and shake off the excess.
0:35 Melt the butter & olive oil in a large skillet over medium heat.
0:46 Once done, add in the chicken strips, bell pepper, and onion.
1:07 Saute briefly until the chicken is still tender but fully cooked.
1:08 Add in the garlic and saute briefly.
1:13 Add the chicken broth, lemon juice. & rice. Let it boil then reduce heat to very low.
1:30 Allow this to cook slowly for roughly 20 minutes or until the rice is fully done & has absorbed the liquid.
1:36 Add the corn kernels towards the last 10 minutes of cooking. Stir to combine.
1:46 Season with salt & pepper to taste and adjust accordingly.
1:58 Before serving, add the lemon zest & parsley. Mix to combine. Enjoy!

GF Chicken Florentine | HomeStyle Gluten Free
Chicken Florentine is an awesome meal for the whole family. It's a great way to get a lot of vegetables into a dish that doesn't feel like you're eating the garden, and it tastes great! *** See the recipe in the description below ***
CHEESE SAUCE
1/4 cup Butter, oil, or combination of both
1 small Onion, minced
4 cloves Garlic, minced
1/3 cup GF flour blend
4 cups Milk, or milk alternative
1/2 tsp Nutmeg
1-2 Tbsp Dijon mustard
2 cups Ricotta, or blend of 2 cups Greek Yogurt + 1 cup Cheese (mozzarella, parmesan, etc)
1 16oz package of Spinach (baby, or regular with stems removed)
1 tsp Salt
1 tsp Pepper
Carrots from poaching liquid, mashed
POACHED CHICKEN
2 large Carrots, roughly chopped (or 8-10 baby carrots)
1 small Onion, roughly chopped
2 cloves garlic, roughly chopped
10-15 whole peppercorns (or 2 tsp ground pepper)
Thyme or bay leaf
Salt to season water
3-4 Chicken breasts
ASSEMBLY/TOPPING
1 box Prepared GF Lasagna noodles
1 cup Mozzarella/parmesan
DIRECTIONS
Poached Chicken:
Place vegetables and seasoning for poaching chicken in stock pot. Place chicken breasts on top of vegetables, and cover with cool water. Bring to a boil, then simmer until chicken is cooked through. Remove chicken breasts, and dice. Remove cooked carrots, mash and reserve for sauce. Approximately 25 min for fresh, 45 min for frozen.
Cheese Sauce:
In a large pot melt butter over medium heat. Add onion and garlic and sauté until soft.
Add GF flour and stir until roux forms.
Slowly add milk, stirring to combine.
Add Dijon, nutmeg, salt and pepper.
Remove from heat and stir in spinach. Rest until spinach wilts.
Add ricotta (or yogurt and cheese), and reserved mashed carrots.
Assembly and Topping:
- Preheat oven @ 375f (with convection if available)
- Coat 9x13 baking dish with non-stick cooking spray
- Assemble in layers starting with sauce, then alternating layers of noodles, chicken, and sauce sauce, and finishing with sauce and cheese (sauce, noodles, chicken, sauce, noodles, chicken sauce, noodles, sauce, cheese). The number of layers you get depends on the size of your baking dish but three or four layers is normal.
- Spread cheese evenly over the top.
- Coat aluminum foil with non-stick spray and cover. Bake for 45min@375f.
- Remove foil bake for an additional 15 minutes to brown cheese.
- Allow dish to cool and firm up before cutting, about 5-10 minutes.
