How to make traditional and creamy Scottish oatmeal porridge
Porridge is the original Scottish health food! Plain porridge oats and oatmeal are 100% natural, with no added sugar, salt or additives. They're naturally low in calories too - an average bowl of porridge made with water is only 171 calories.
Enjoyed by Scots for centuries, porridge has seen a resurgence over recent years, enjoyed as porridge and in breakfast bars, museli and of course overnight oats.
Traditional Scottish porridge is made with three ingredients - oatmeal, water and salt. It takes just a few minutes to make - just remember the quantities: 1/3 oatmeal (or porridge oats if you prefer) to 2/3 liquid and you won't go far wrong.
For a creamier version, use 1/3 oatmeal, 1/3 water and 1/3 milk.
Use a spurtle if you have one, or a wooden spoon if you don't, and really get into the corners of the pan so it doesn't stick, and keep stirring until it's cooked.
Enjoy as it is or with your favourite toppings - milk, sugar, blueberries, peanut butter, fruit, really whatever you like.
However you like it, a bowl of porridge is the best way to set you up for the day.

It works really well with pasta, oatcakes, toasted sourdough and you can even make a delicious smoke salmon and prawn terrine with this recipe. My favourite has to be traditional Scottish smoked salmon pate on my home made Scottish oatcakes.
This pate can be made with smoked salmon trimmings for an inexpensive pate but I like to make it with a good quality smoked salmon. I've detailed the Scottish smoked salmon I used for this recipe below. It's a really high quality smoked salmon and has a delicious taste. They have a variety of smoked salmon products and are a Scottish producer.

As mentioned above this pate can be made with smoked salmon trimmings and it makes this pate really inexpensive to make. Check with local producers of Scottish smoked salmon for trimmings or you can sometimes find them in the supermarket. I personally prefer to use the Scottish smoked salmon slices and like the taste that these give. It does cost a little extra to make but its worth it and the texture and taste in my opinion is superior. It makes the perfect silky smooth scottish smoked salmon pate.
