How to Make HARRY POTTER Gingerbread Cookies | GLUTEN-FREE Recipe
In this week's vlog, we get into the holiday spirit with attempting gingerbread cookies for the first time! Buuutt because Jenn has a gluten intolerance and we adore Harry Potter, we thought we'd put a spin on the classic Christmas cookie. This gluten-free recipe from Gluten Free on a Shoestring (link below) creates the perfect soft and chewy gingerbread cookies. We hope you enjoy our trial attempt and have a few laughs as well because we sure did (obviously we're not professionals).

BUTTER BEER COOKIES...INSPIRED BY THE BUTTERBEER DRINK IN THE HARRY POTTER MOVIES....
BUTTER BEER COOKIES....INSPIRED BY THE BUTTERBEER DRINK IN THE HARRY POTTER MOVIES. These cookies are so easy to make that you don't even need to use a mixer. They contain Butterscotch morsels and Toffee Bits that give them a delicious flavor. They are a chewy cookie that I love. You start out with a box of Butter cake mix and go from there. I'm sure if you are a fan of the Harry Potter books or movies you will remember his favorite drink.....Butterbeer. These cookies are perfect for a party, cookie exchange, holiday, or just because you feel like having a cookie! The recipe is below so if you make them let me know how you like them. Hugs, The Baking Diva

1 box of butter cake mix
2 eggs

2 Tbsp. of water
1 tsp. cinnamon
1/2 cup butterscotch morsels
1/2 cup toffee bits
Glaze: Optional
1 cup powdered sugar
1 tsp. vanilla
2 tbsp. liquid French vanilla coffee creamer
Mix the first seven ingredients by hand until the batter is smooth and shiny.
Drop by tbsp. full onto parchment lined cookie sheet.
Bake for 10 minutes.
Pull them out of the oven and let them sit on a cooling rack
and they will firm up.

DIY Harry Potter Butterbeer Sugar Cookies!
Website I learned this from:
Ingredients for Butterbeer sugar cookies:
3 cups unbleached, all-purpose flour
2 tsp baking powder
1/2 cup granulated sugar
1/2 cup light brown sugar (packed)
2 sticks butter
1 egg
1 tsp butter flavoring
3/4 tsp pure vanilla extract
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Whisk the flour, baking powder, set aside.
Cream the sugar and butter. Add the egg, butter flavoring, and vanilla; mix until well-blended.
Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom. (The dough will be quite thick...you may need to knead in stray bits of flour from the bottom of the bowl by hand.)
Roll on a floured surface to about 1/4 and cut into shapes. Place on parchment lined baking sheets and bake for 9-12 minutes, depending on the size of your cutter. Let sit a few minutes on the sheet, then transfer to a cooling rack.
Ingredient for Butterbeer glaze:
2/3 cup butterscotch chips
1/8 cup evaporated milk
1 TBSP light corn syrup
pinch coarse salt
Instructions:
Place all of the ingredients in a microwaveable safe bowl and heat in 10 second intervals until fully melted, stir in between.
Put the cooled cookies on a wire rack on a baking sheet. Pour the glaze over the cookies and spread with a spoon.
