How To make Grilled Vegetable Soup(From My Garden)
8 tomatoes
2 red onions
sliced
2 zucchini :
sliced
2 yellow squash sliced
3 red peppers :
roasted and peeled
2 cloves garlic chopped
Salt Pepper Juice of one lemon 2 tablespoons rosemary :
chopped
Grill all vegetables except garlic. In food processor place all ingredients, except 1/2 cup vegetables. Process until smooth. Season with salt, pepper, lemon and rosemary. Dice remaining 1/2 cup vegetables . Serve hot or cold with diced vegetables sprinkled on top.

Ingredients:
2-10¾ oz can condensed tomato soup
1 cup pearl barley
4 cups chicken or vegetable broth
1 cup tomatoes, cut into chunks (no need to deseed)
1 cup red onions, cut into chunks
½ cup bell peppers of your choice, medium dice
½ cup kale, cut into chunks (trim off hard stems)
½ cup white wine
¼ cup tomato paste
¼ cup parmesan cheese, grated or powdered
3 tbsp olive oil
2 garlic cloves, minced
1 tbsp chopped cilantro
1 tbsp granulated sugar
½ tsp onion powder
¼ tsp garlic powder
Salt & ground black pepper to taste

0:13 Heat some olive oil in a soup pot over medium heat. Add the onions and garlic. Saute until translucent.
0:32 Add the tomatoes and bell peppers. Continue sauteing.
0:42 Add the tomato paste and roast briefly.
0:49 Deglaze with white wine and reduce briefly.
0:58 Add the barley, condensed soup, and chicken or vegetable broth.
1:10 Bring the mixture to a boil, then reduce to a simmer. Continue simmering for 30 minutes until soup has been reduced by roughly ½ and vegetables are tender. Stir occasionally to avoid burning.
1:22 Add the kale and cover to let it wilt.
1:36 Add sugar, cheese, onion powder, garlic powder, and cilantro. Stir to combine, until the cheese is incorporated.
1:57 Season to taste with salt and pepper. Adjust accordingly. Serve.

A rainbow of vegetables, roasted until sweet, tender. All blended together with stock and creamy-yet-sharp parmesan and you’ve got the perfect lunch to warm you up from the inside. Dishing up steaming ladles of this roasted vegetable soup with chunks of fresh bread is one of my favourite ways to enjoy lunch over Winter.
I love to roast them until golden and caramelized to add lots of extra flavours. Throw in some parmesan too for a creamy finish.
This soup is packed with nutritious vegetables!

Ingredients for this roasted vegetable soup:
▢1 large sweet potato - peeled and chopped into chunks
▢1 red bell pepper - deseeded and chopped into chunks
▢1 yellow bell pepper - deseeded and chopped into chunks
▢2 medium carrots - peeled and chopped
▢3 cloves garlic - left in the skin
▢3 tbsp olive oil
▢½ tsp salt
▢½ tsp ground black pepper
▢½ tsp paprika
▢½ tsp ground cumin
▢1 red onion - peeled and chopped into wedges
▢1 litre (4 ¼ cups) vegetable stock - (use vegetable bouillon for gluten-free)
▢35 g (⅓ cup) grated parmesan - (Use vegetarian hard cheese for full vegetarian version)
