How To make Grilled Steaks & Torch Bananas
4 Rib Eye or Sirloin Steaks
MARINADE:
1/2 c Soy Sauce
1/2 c Pineapple Juice
1 tb Dried Ginger, Shredded
4 tb Sherry
1 tb Butter, Melted
1 ts Dry Mustard
1 Clove Garlic, Pressed
1/2 ts Curry Powder
TORCH BANANAS:
2 lg Ripe, Firm Bananas
1 tb Lemon Juice
1 tb Pineapple Juice
2 tb Butter, Melted
1 tb Honey
3 tb Coconut, Shredded
FLAMING SAUCE:
3 tb Brandy
Preheat the barbecue - it is ready when all the coals have an even coating of thick, gray ash. Score the fat edges of the steaks every 2". Place the steaks in a shallow dish. Combine the marinade ingredients. Pour the marinade over the steaks. Turn the steaks. Cover. Marinate refrigerated for at least 3 hours, turning once. Peel the bananas. Cut each banana in half lengthwise. Brush with lemon juice. Make "cups" out of foil to hold the bananas, two banana halves to each "cup". Mix the pineapple juice, butter and honey. Brush the bananas with this mixture. Sprinkle with shredded coconut. Bring the top of the foil over to fully enclose the bananas. Joel Ehrlich on rec.food.cooking

In this Crème brûlée video tutorial you will learn how to make the classic French version of the creme brulee recipe. using milk, cream, no bain marie and a kitchen blowtorch.
Crème brûlée (also known as burnt cream, crema catalana, or Trinity cream) is a dessert consisting of a rich custard base topped with a layer of caramel. It is normally served cold. The custard base is traditionally flavored with vanilla.
A word about caramelizing:
When the custard is ready, Just before serving, take the crème brûlée out of the fridge and sprinkle a layer of sugar on top of the custard, as evenly as possible. Per (4-ounce) ramekin, use between 1 teaspoon and 1 tablespoon of sugar (depending on the form of the ramekins and your own taste). There are different tools to caramelize the sugar and create the crunchy sweet caramel crust on top of the crème brûlée.
To caramelized the creme brulee use one of the three method that are discussed in the video : the culinary torch, the broiler and the flambee method.
The ideal is to caramelize the top of the crème brûlée without heating up the custard filling below. In any case: make sure not to burn the sugar/cream! After caramelizing, you can serve the crème brûlée immediately

Hey hey! This is a vid filmed a while ago and I had it posted on another channel of mine so decided to share it here. Its a simple and deeelicious recipe... if you like bananas, rum, and vanilla ice cream p: Needless to say (but still gonna say it), this is one for the 21 and uppers since it does involve alcohol. Although yes, the majority of the alcohol burns out during the flambe process, just saying.
My friend jariza and I did a lot more goofing around and a little less explaining, so I apologize for that but I still hope you *like* the vid and hope you get a chance to try it out if you haven't already! Take care and FLAME ON!

★BANANAS FOSTER★
..INGREDIENTS..
For one serving:
-1 T Butter
-1 T Brown Sugar
-1/4 t vanilla extract (optional)
-1/2 banana, sliced
-1 oz rum
-pinch of cinnamon
-1 scoop vanilla ice cream
..TOOLS..
-saute pan
-paring knife
-torch lighter
-bowl
1. Set stove to medium heat
2. Add butter, allow butter to melt then add sugar
3. Add banana slices, vanilla extract, cinnamon, and rum
4. Flambe! Carefully ignite sauce, remove pan from heat and wait for flame to burnout
5. Add bananas to a bowl and top with icecream
6. Top ice cream with rum sauce and a pinch of cinnamon
