1g (0.03oz) - Fresh Tarragon
3g (0.1oz) - Fresh Parsley
300g (10.5oz) - Thickened Cream
50g (1.7oz) - Parmigiano Reggiano, Freshly Grated
Instructions -
1. Add chicken, olive oil, onion powder, garlic powder, dried thyme, dried oregano, and salt and pepper in a bowl. Mix well and set aside.
2. Add the remaining olive oil to a large pan over medium-high heat and sear the seasoned chicken in batches for 6 minutes on each side or until deeply golden and cooked through. Remove, set aside and repeat with the remaining batch.
3. Add the unsalted butter and shallot and cook for 1 minute. Add in the mushrooms and salt to taste and sauté for 6 minutes. Add the garlic and sauté for 45 seconds to 1 minute, mixing the whole time. Deglaze with the wine or chicken stock and cook for 1 1/2 minutes or until reduced by half.
4. Add in the cream, mix well and bring to a simmer; reduce the heat to medium-low and cook for 5-6 minutes or until thickened. Add the parmesan cheese, flat-leaf parsley, tarragon and seasoning to taste. Mix to combine. Add the chicken back into the sauce with the resting juices and coat the chicken well. Cook for 1 minute. Remove from the stovetop.
5. Serve in bowls or plates and garnish with flat-leaf parsley, cracked black pepper and parmesan cheese. Dig in.
Recipe Notes -
I used chicken stock as I needed to use up ingredients but white wine can be used as a replacement.
This dish is best eaten fresh as cream based sauce can potentially split upon reheating. If you did wish to store it, it will last 2 days in the fridge. I don’t recommend freezing it.
This recipe is amazing on its own but can also be served with all of your favourite sides such as mashed potato, pasta, rice and a wide range of different vegetables.
The fresh herbs are optional as well as the parmesan cheese but add incredible flavour. If you can’t source fresh herbs they can be substituted for their dried counterparts. Use 1 tsp of dried parsley and 1/4 tsp of dried tarragon. The tarragon can easily overpower the dish if used too much. You can always add but can’t take out so adjust to your liking.
Cream alternatives will no longer make this dish the amazing recipe that it is. Without cream, you’ll need to add flour as a thickening agent which will ruin the texture of the sauce.

What Makes HexClad the Absolute Best Cookware You Can Have in Your Kitchen?
HexClad's patented cookware design technology is unmatched in today's world of cooking. Simply put, it is the best cookware you can buy. So how does it work?
A well-seasoned HexClad pan will provide the cooking experience of stainless steel, non-stick and cast iron in a single pan.
Using a proprietary laser etching process, we create our patented HexClad hexagon design on the cookware. This unique design creates a series of peaks and valleys.
- The peaks are your stainless steel, which will give you that great golden-brown sear and also protect the pan against peeling and flaking.
- In the valleys is the nonstick surface, which provides your pan with easy cleanup and the ability to cook with less butter, grease or oil.
- HexClad utilizes a tri-ply, clad style pan. We start with a layer of magnetic stainless steel. This way it not only works on gas and electric stoves but also on newer magnetic induction cooktops.
- Next, we have a middle layer of aluminum, which acts as the heating element, providing the pan with nice, even heating. We then sandwich this aluminum layer between one more layer of steel.
In addition, HexClad is metal utensil safe, oven safe up to 500 degrees and dishwasher safe.
Delicious & Nutritious Healthy Pasta Recipe: Ashley Drummonds
Eating a healthy meal does not mean it can’t also be delicious while having a lot of nutritional value. When I first got into fitness, I always hated veggies because they were always steamed and boring with very little flavor. I knew the nutritional value of fresh vegetables, but just did not enjoy eating them. One day, I decided to get creative and just make vegetables using some of my favorite seasonings and ingredients and have now come to love sautéed veggies made with this recipe!
The great thing with this veggies recipe is you can use it as the topping to delicious pasta (like in this video), but you can also save them for a quick and healthy side for other meals throughout the week.
Here are the ingredients you need (I chose a few of my favorite veggies, but if there is something in here you don’t like you can simply swap it out for your favorite veggie option):
1 Whole Zuchinni
1/2 Small Red Onion
Approximately 2 cups Fresh Brussel Sprouts
1 Cup Baby Portobello Mushrooms
Olive Oil
Seasoning Salt
Whole Wheat Angel Hair Pasta
2 Tbsp Goat Cheese (you can use your fav cheese)
In a large sauce pan drizzle 1-2tbsp of Olive Oil, add seasoning salt and chopped red onion. Let simmer on medium heat until onions are clear-Ish. Chop up Brussel sprouts into small pieces (like in video) and add to pan with onions then stir onions and Brussel sprouts together to coat with olive oil and seasoning. Let those veggies simmer for about 3-5 mins (keep stirring every so often and let Brussel sprouts start to brown). While veggies are simmering, slice up one whole zuchinni then add to the veggies in the pan. Stir veggies again and add more seasoning salt so everything is coated. Last, slice fresh mushrooms and add to top of veggies (mushrooms cook quickly so you want to add them last).
Turn to low to medium heat and let simmer.
While veggies are cooking, full a pot 1/2 the way with water add a dash of sea salt and bring to a boil. Once water is boiling, add in desired amount of whole wheat pasta noodles and let cook 3 minutes for al dante and about 5 minutes for softer noodles. Keep stirring veggies while pasta is cooking.
Once pasta is done, strain out all the water. When veggies are soft remove from heat. Take 1 cup of cooked pasta and place in bowl. Then top with sautéed veggies. Drizzle with 1 tbsp of Truffle or Olive Oil. Sprinkle with 1-2 Tbsp of Goat Cheese (or your favorite cheese). Then enjoy!! The whole wheat pasta gives you a delicious carbohydrate source, the goat cheese provides a natural protein, the olive oil has great healthy fats, and the veggies are a great source of vitamins and nutrients! This is a quick and healthy meal I make every week for a delicious dinner!
