How To make Grilled Chicken Sandwich with Smoky Red Onion Salsa
---------------------------SMOKY RED-ONION SALSA;--------------------------- 1 sm Red onion, cut into 4 slices
1 Tomato, cut into 4 slices
6 tb Fresh lime juice
1/4 c Chopped fresh cilantro
4 ds Red pepper sauce (up to 10)
Salt and cracked black -pepper
SANDWICH:
3 tb Chili powder
1 tb Cumin
1 tb Cracked black pepper
4 Boneless, skinless
-chicken-breast halves (1 -1/4 lb.) Salt 8 sl Sourdough bread,
-1/2-inch-thick 1/4 c Mayonnaise
Assorted baby lettuces
1. Heat grill.
2. Make Smoky Red-Onion Salsa: Grill onion and tomato slices 2 minutes per
side. Chop coarsely and transfer to bowl. Stir in remaining ingredients. Makes 2 cups.
3. Combine chili powder, cumin and pepper in small bowl. Rub all over
chicken. Sprinkle with salt.
4. Grill chicken over medium-hot heat until cooked through, 4 to 5 minutes
per side. Grill bread until golden, 30 to 60 seconds per side.
5. Top 4 bread slices with mayonnaise, lettuces, chicken, then salsa. Top
with remaining bread.

Coleslaw Recipe: make day before serving
Dressing: In a large bowl
- 1/2 cup of mayonnaise
- 2 Tbs. of red wine vinegar
- 1 Tbs. of dijon mustard
- 2 tsp. of Cholula Hot Sauce
- 2 tsp. of Slap Ya Mama cajun seasoning
- mix all well
Add:
- 16 oz. bag of coleslaw mix
- 1/4 of a red onion finely diced- 3/4 of a cup
- 5 oz. of dried cranberries
- 1 Honeycrisp apple, peeled, cored and cubed
- Mix all well. cover and store in refrigerator overnight
- stir before serving
Grilled Chicken Sandwich:
- In a heavy ziplock bag flatten boneless skinless chicken breast to a 1/2
- add 2 oz. of Italian dressing to the bag, remove air, zip up and let it marinate for at least 2 hours
- Remove the chicken from the bag, pat dry with paper towel
- Season both sides with Slap Ya Mama cajun seasoning
- cut in half to make 2 sandwiches
- place on hot grill for approximately 3 minutes
- flip, brush with your favourite BBQ sauce
- lay sliced provolone cheese on top
- cook approximately another 3 minutes until internal temperature is 165F
- brush Brioche bun with melted garlic butter and toast on the grill to golden brown
- place a piece of chicken on the bottom of the bun
- place a generous helping of The Best Darn Coleslaw on top of the chicken, top with bun. OH MY! Mouth watering! Enjoy and thanks for watching. Pete.

Chipotle Buffalo Chicken Sliders | El Yucateco #kingofflavors | Grilled Chicken Sandwich Recipe
El Yucateco makes some great hot sauces and I used their great hot sauce to make some super chicken sliders or a full sized grilled chicken sandwich. Here on Texas Style BBQ and Cuisine we try to make dishes that our viewers will like and some that they suggest. These chicken sliders were packed with flavor from the sauted onions and celery in them to the Dirty Bird Hot from Kosmos Q. Then mixed in with all that flavor I added some of the Chipotle Hot Sauce from #kingofflavor El Yucateco. These ground chicken patties were placed on my Weber grill over a bed of hot Fogo Charcoal coals. I grilled them to 165° internal temperature and then placed the minced chicken patties on a toasted mini kiser bun. To finish up these tasy little sliders I used some bright green leaf lettuce, red onion slices and some red tomatoes. Then to push the flavor over the top I made some spicy habanero mayo. This grilled chicken slider takes ordinary buffalo chicken to a whol new level. So make sure you tell your friends and family about my chipotle buffalo chicken sliders and try them yourself.
