How To make German Cabbage Rolls
SAUCE: 1 28 oz can tomatoes
1 8 oz can tomato sauce
3 tb Brown sugar
3 tb Lemon juice
1 Small onion; chopped
1 Bay leaf
1/2 ts Celery salt
1/2 ts All spice
1/2 ts Pepper
1 c Water
1/4 c Chopped parsley (fresh)
ROLLS: 16 Cabbage leaves
2 lb Ground beef
1 c Cooked white rice
1 Large onion, chopped fine
1/2 c Chopped parsley
1 ts Sage
Salt and pepper Mix sauce ingredients in saucepan and simmer 30 min. Blanch large head of cabbage in boiling water for 3 min. Peel off 16 leaves. (May have to dip in water again to get all leaves off). Mix ground beef, rice, onion, parsley and spices well. Pat down in bowl. Cut into 16 (like cutting pie). Place meat mixture on cabbage leaf and fold up. May need to cut a "V" at the core part of the cabbage leaf if too stiff too fold. PLace seam side down in pan. Make all rolls. Pour sauce over all. Top with crushed gingersnap crumbs. (12-14 cookies worth). Bake covered at 350 for 1 hour. Take cover off after first half hour. Attempting to make German Cabbage Rolls!! We really enjoyed the Kohlrouladen we had in Leipzig, Germany! We wanted to try and recreate the delicious meal. Ladies and Gents, put on your slow music and get a breath mint because we are making some German cabbage rolls. Are they good? Heck to the yes! Will your breath stink? Who knows. I do know this though, they are so dang good. My grandma makes them.
German Cabbage Rolls
German Cabbage Rolls / Kraut Wickel
This recipe is my version of a Cabbage Rolls a popular dish in Germany and I am happy to share it with you.
Let’s get started!
INGREDIENTS
10 - 20 cabbage leaves
1-2 packets of brown/pork roast gravy
-MEAT FILLING
1.5 lb. of ground meat (I used turkey but you may use any ground meat and even mix more that one together)
1 cup of Italian Bread crumbs (or any bread crumbs you have in your home, you can even make your own with crackers) *Gluten-free, gluten-free bread crumbs
1/4 cup paprika
1/4 cup Worcestershire sauce (substitute 1/2 cup of beer, that is what I had to do in this video)
1 tbsp. garlic and herb seasoning
1 tsp. onion powered (you can use fresh chopped onion 1/2 cup)
1 tsp. caraway seeds
1 tsp. ground cumin
1 tsp. salt
1 tsp. pepper
INSTRUCTIONS
-PREP THE CABBAGE
1. Cut the core of the cabbage out but cut into the cabbage a little deeper to loosen the leaves
2. Bring a pot of water to a boil, place cabbage into the boiling water with salt, and place lid on top
3. Reduce heat to medium boil for about 15-25 depending on the size of your cabbage (you want the leaves to soften but not breaking apart)
4. Get your strainer ready in the sink, strain cabbage, rinse with cool/cold water, set strainer onto of bowl and set aside for about 15-30 minutes to cool down
5. Gently pull leaves off one at a time and set on a plate
-PREP THE MEAT FILLING
1. In a large bowl add your meat, dry and wet ingredients
2. Mix by hand or with a mix and chop tool
-PREP GRAVY
1. Follow instructions on gravy package
2. Set to the side to use later
-ROLL THE CABBAGE ROLLS
1. Lay a whole cabbage leaf, either remove the thick part of the vein or soften it with a meat mallet
2. Add a meatball size of the meat mixture onto the round part of the leaf
3. Start to roll cabbage, after the first roll tuck/bring each side into the center and continue to roll the cabbage finish
4. Place cabbage roll into a deep dish or casserole dish
5. Pour the brown-gray over the cabbage rolls to cover 90% of them
-BAKE
1. Preheat oven to 350F
2. Place cabbage rolls on the top rack
3. bake for 45 minutes
Serve with German potato dumplings (Knoedel), Sauerkraut/Red Cabbage, Spatzle, or sides of your choice.
