How To make Fried Mexican Ice Cream
1 pt Vanilla ice cream OR
-other flavor 1/2 c Crushed cornflake OR
-cookie crumbs 1 ts Ground cinnamon
2 ts Sugar
1 Egg
Oil for deep frying Honey Whipped cream Scoop out 4 to 5 balls of ice cream. Return to freezer. Mix cornflake crumbs, cinnamon and sugar. Roll frozen ice cream balls in half of crumb mixture and freeze again. Beat egg and dip coated balls in egg, then roll again in remaining crumbs. Freeze until ready to use. (For thicker coating, repeat dipping in egg and rolling in crumbs.) When ready to serve, heat oil to 350F. Place 1 frozen ice cream ball in fryer basket or on perforated spoon and lower into hot oil 1 minute. Immediately remove and place in dessert dish. Drizzle with honey and top with dollop of whipped cream. Continue to fry balls one at a time. Balls will be crunchy on outside and just beginning to melt inside. Makes 4 to 5 servings

Ingredients
1/2 to 1 gallon vanilla [bean] ice cream
4 egg whites
4 cups crushed cubed cereal [recommended: Plain Corn Flake]
[Sugar]
[Mexican Cinnamon]
[Ground Nutmeg]
Vegetable oil, for frying
Cinnamon, honey, whipped cream, chocolate sauce, optionalgarnish
Directions
Line a rimmed baking sheet with parchment paper or a silicone baking sheet. Scoop the ice cream into 2-inch balls and freeze on prepared baking sheet for a least 2 hours.
Lightly beat the egg whites in a medium bowl. Put the crushed cereal in a separate medium bowl. Dip a frozen ice cream ball into egg whites and then roll in the crushed cereal [mixture along with sugar, cinnamon and nutmeg] and return to the baking sheet. Repeat the procedure with the remaining ice cream balls, egg whites, and cereal. Put the baking sheet into the freezer and freeze for at least 2 hours or overnight.
*Cook's Note: For extra crispiness, dip the coated ice cream balls again into the egg whites, and reroll in the crushed cereal [mixture along with sugar, cinnamon and nutmeg]
In a large Dutch oven or fryer, pour vegetable oil to a depth of 4 inches and heat to 375 degrees F.
Fry the ice cream balls, in batches if necessary, until golden, about 1 minute. Remove from the oil anddrain on paper towels. Transfer to a serving platter and serve immediately with optional garnishes, if desired.

How to tantalize your taste buds. Five extra minutes and you have transmogrified your vanilla ice cream. It is a perfect cap to any Mexican dish.
Mexican Fried Ice Cream Balls Recipe:
1⁄2 cup butter
1 cup brown sugar
4 cups Honey Bunches of Oats
1⁄2 gallon vanilla ice cream
1 jar hot fudge sauce
In a small saucepan, bring 1 cube butter and 1 cup brown sugar to boil over medium heat, stirring frequently. In a large mixing bowl, pour mixture over 4 cups of Honey Bunches of Oats and mix to coat cereal. Spread mixture to cool on sheet of aluminum foil, or parchment paper. Once cooled, break apart. Roll medium balls of ice cream in mixture, to coat. (1/2 gallon ice cream should make about 10 balls). Set on cookie sheet and freeze. Serve individual servings in a bowl and cover with hot fudge sauce.
Notes: This would go great at the end of a Mexican meal, as they are very similar to “fried ice cream” you find in Mexican restaurants. So good, so easy!
