How To make Foil Envelope Fish
1/2 x Green pepper, sliced
1 x Green onion, sliced
1 ea Salt
1 x Filet firm white fish
1/2 x Tomato, sliced
1/2 T Basil
1 ea White pepper
3 x Slices lemon
Cut tin foil into 12X16 inch rectangle. Place green pepper, tomato and green onion on lower half of foil sheet. Sprinkle with 1/4 teaspoon basil, salt and pepper. Place fish on vegetables. Sprinkle with remaining basil, salt and pepper. Top with lemon slices. Fold upper half of foil over fish and vegetables. Double fold edges of foil to make a tight 1/2 inch seal. Place foil envelope on baking sheet and bake at 450F for 15 minutes or until envelope puffs. To serve, Cut an "X" in top of envelope and fold foil back.

BAKED FISH IN FOIL | MELAKA PORTUGESE BAKE FISH | PORTUGUESE STYLE GRILLED FISH
Melaka has a variety of foods which include Malay, Chinese, Baba Nyonya, and many more! This particular dish is inspired by the Portuguese. This is one of the famous dish comes from Melaka!

Ingredients for 1 whole fish [baramundi/ siakap (malay)] or any other fish you like:
Blended ingredients:
3 big red onions
3- 4 Shallots
4 cloves of garlics
3 stalks of lemon grass
6 dried chilies
6 red chilis
3 to 5 pieces bird eye chilies (if you can't take spicy reduce this to minimum 3)
1 inch Galangal
1 inch Fresh Tumeric
2-3 Candlenut
1 small cube of shrimp paste (optional)
To Saute:
5 table spoon of oil
1/2 cup of tamarind juice
Salt to taste
3 limes and Kaffir leaves for deco
Aluminum Foil or banana leaves

Flounder Foil Packs
(makes 2 serving packs)
Ingredients
Flounder Fillets, about 10-12 oz.
1 White Onion, sliced into rings
1 Fresh Lemon, sliced into 6 thin slices
¼ tsp. Paprika
¼ tsp. Ground Thyme
¼ tsp. Garlic Powder
1/8 tsp. Black Pepper
1/8 tsp. Sea Salt
2 Long Sheets of Aluminum Foil
Preheat oven to 350 degrees.
In a small bowl, mix together all spices until well blended. Season both sides of each flounder fillet. On a sheet of foil, place 2 slices of lemon in center. Place half (about 5-6oz.) of the seasoned flounder on top of the lemon slices. Place half the onion rings on top of flounder. Top with one slice of lemon. Take long sides of foil and meet them together and foil over twice (with room for air) to close top. Pinch and fold both sides, creating a foil envelope. Repeat with second sheet of foil and remaining ingredients. Place foil packs on a cookie sheet and place in a 350 degrees preheated oven for 20-25 minutes. Take out of oven and let sit for 5 minutes. Carefully open packs, beginning with the side and let the steam release. Open remaining edges. Remove flounder and onions to serving dish. Take the top slice of lemon and squeeze juice over fish before eating.
Excellent served with steamed cabbage and cherry tomatoes.

Fast Fish in Foil with Vegetables
One Serving: Four Servings:
1 fillet fresh or frozen fish 4 fillets fresh or frozen fish
1 Tbsp butter ¼ cup butter
1/8 tsp each: Old Bay Seasoning ½ tsp: Old Bay Seasoning
Italian Seasoning Italian Seasoning
Paprika Paprika
Garlic Powder Garlic Powder
Onion Powder Onion Powder
1/3 cup fresh or frozen vegetables 1 1/3 cups fresh or frozen vegetables
2 Tbsp Parmesan Cheese, grated ½ cup Parmesan Cheese, grated
Squirt of Lemon or lemon juice ¾ tsp lemon juice
2 pieces foil, one on top of other for strength 8 pieces foil, stack in 2’s for strength
Place fillet(s) on doubled up foil squares, one or two small per foil square.
Melt butter and herbs in microwave.
Place vegetables next to fish on foil.
Pour melted butter mixture over fish.
Salt and pepper fish and veggies if you like.
Sprinkle parmesan cheese on top of fish.
Add squirt of lemon juice on fish.
Tent/pinch foil together at top and fold sides well to keep juices inside.
Bake in 400-degree F oven for 15 minutes; open pouch and broil until cheese is lightly browned.
Plate fish and vegetables and pour sauce over top.
Fish is thoroughly cooked when a fork twists with ease in center, or a thermometer reads 145 degrees.
