Recipe: Brazilian Feijoada-Style Meat & Bean Stew
We know, Feijoada is a tongue-twister! But this regional specialty from Brazil is one of the country’s most famous dishes. With lots of good-for-you ingredients, this stew is a deliciously comforting meal.
Brazilian Feijoada-Style Meat & Bean Stew:
Prep time: 15 min | Total time: 3 hours 15 min | Serves: 4
Ingredients:
1/2 lb (250 g) stewing beef
1/4 tsp (1 mL) salt
2 tbsp (30 mL) olive oil
1 dry cured chorizo sausage (8 oz/250 g), chopped
1 pkg (250g) Mirepoix Mix
3 cloves garlic, minced
1 can (796 mL) Compliments Balance No Salt Added Diced Tomatoes
1 can (540 mL) black beans, drained and rinsed
1/4 cup (60 mL) finely chopped fresh cilantro
2 tsp (10 mL) finely grated orange zest
1 orange, cut in wedges
Directions:
Preheat oven to 325ºF (160ºC). Season stewing beef all over with salt. Heat oil in an ovenproof Dutch oven set over medium-high heat. Cook beef for 8 to 10 min or until browned all over. Transfer to a plate.
Reduce heat to medium. Stir in sausage, mirepoix and garlic. Cook, stirring, for 8 to 10 min or until vegetables have softened. Stir in 1/2 cup (125 mL) water and tomatoes. Bring to a simmer. Stir in beef. Bake, covered, stirring occasionally, for 90 min.
Stir in beans, continue to cook, covered, for additional 60 to 90 min or until beef is tender. Stir in cilantro. Serve with rice, freshly grated orange zest and orange wedges.
TIP: The chorizo in this recipe is dry cured and does not require cooking. Look for it in the deli department of the store.

Add 2 tbsp of oil to a warm pan and brown all meats for about 20 minutes, mixing periodically.

Cut the onion into big chunks and add to browned meat the onions, garlic, bullion, black pepper, bay leaves. Sautéing for about 5 minutes.

Cook on a slow cooker or stove top pan for about 6 hours.

At about a half hour before the feijoada is done, remove a cup of the beans. Mash and return into pan, mix well, and cook for the last half hour.

Feijoada traces back to Brazil's cultivation of black beans and because the crops relatively low cost of production and the simplicity of its maintenance beans became a staple among European Settlers in Brazil.

Welcome to the Geojaklin Kitchen.
Feijoada is a Brazilian Black Bean stew that’s bursting with flavour. This is usually made with Black Beans along with Beef and Pork, but today, we’re doing a cheaper vegetarian version of Brazil's National Dish. This is served with Steamed Rice, sauteed Kale and slices of Orange for a filling, nutritious and flavoursome dish and will delight everyone eating it. We’re sure you’ll love making it too.
This recipe will serve 4 people.
Ingredients:-
4 Tbsp Olive Oil
2 Large Yellow Onions (peeled and chopped)
A couple of pinches of Salt
2 Tsp Ground Cumin
2 Tsp Ground Coriander
2 Tsp Smoked Paprika
2 Tsp Oregano
3 Bay Leaves
5 cloves Garlic (crushed)
1 Tsp Black Pepper
500g cooked Black Beans (if canned, drained and rinsed)
400ml Vegetable Stock
1 Tbsp Apple Cider Vinegar
1 Tbsp Balsamic Vinegar
2 Tbsp Soy Sauce
1 Tbsp Butter (or vegetarian alternative)

(Feijoada) Brazilian Black Bean Stew
Feijoada is a stew of pork, beef, sausage, and beans, commonly served with oranges and white rice it is considered the national dish of Brazil.
Remember Sanitation and Safety first!!
Yields 4 servings
8 oz Dried black beans, soaked overnight
8 oz Various smoked and/or salted pork products (bacon, salt pork, smoked hock, etc*)
4 oz Linguiça, or dried Spanish-style chorizo (optional)
2 oz Corned beef, large dice (optional)
4 oz Yellow onion, small dice
4 oz Green bell pepper, small dice
1 oz Garlic, minced
2 ea Scallions, white part only, sliced (sliced greens saved for garnish)
1/4 c Cilantro, chopped
1 ea Tomato, fine diced
2 ea Bay leaves
*if not using pork, substitute with
smoked turkey products
1. Drain and rinse soaked beans
2. Place all ingredients in a pot and cover with water
( fill to two inches above ingredients)
3. Bring up to a boil and immediately down to a simmer
4. Cover and cook until beans are tender
5. Remove any large meats, remove from bone
as needed, dice or shred, and return to beans.
6. Taste, season, and adjust as needed
7. Serve over white rice
Dumplings
1 cup water
1cup flour
1/2 teaspoon salt
Mix salt and water together (do not over salt)
add mixture to flour.
Mix till flour is firm and manageable to form into dumplings
Place in stew, let cook for approx. 5 minutes then serve.
