How To make Fast with Five: Almond Trout
2 tb Butter
1/2 c Sliced almonds
1 1/2 lb Trout fillets
2 tb Lemon juice
1/4 c Green onions, finely chopped
In a large nonstick skillet, heat butter over medium-high heat until browned and sizzling stips. Stir in almonds; cook, stirring, for 1-2 minutes or until golden. With slotted spoon, remove and set aside. Add trout fillets, skin side up; cook for 4-5 minutes or until edges are opaque and bottom is browned. Turn fillets and cook for 2 minutes. Sprinkle with lemon juice and 1/4 ts pepper; cook for 1-2 minutes or until fish flakes easily when tested with fork. With slotted spatula, remove fillets to serving platter. Return almonds to pan; stir in green onions. Pour over fish. Add a green vegetable such as frozen asparagud, plus rice fluffed and wellseasoned with fresh parsley. Grilled Trout Almondine

Ingredients
2 oranges, halved
2 heads radicchio, halved
1/4 cup extra-virgin olive oil, plus more for brushing
Kosher salt and freshly ground black pepper

1/4 cup finely chopped toasted blanched almonds
1/4 cup white wine vinegar
2 tablespoon chopped fresh flat-leaf parsley, plus whole leaves, for garnish
1 teaspoon clover honey
1 teaspoon Dijon mustard
Four 6-ounce skin-on rainbow trout fillets, about 1/2 inch thick
Canola oil, for brushing
Directions
Heat a charcoal or gas grill to high for direct grilling. Brush the cut sides of the oranges and radicchio with some olive oil and season with salt and pepper. Put the oranges and radicchio cut-side down on the grill and cook just until charred and slightly softened. Transfer the radicchio to a platter.
Squeeze the orange juice into a bowl and whisk in the almonds, vinegar, parsley, honey, mustard and salt and pepper to taste. Slowly whisk in the olive oil until emulsified. Let sit at room temperature for at least 15 minutes before serving.
Brush the trout fillets with canola oil and sprinkle with salt and pepper on both sides. Grill until golden brown and slightly charred on both sides and just cooked through, about 3 minutes per side. Remove to the platter with the radicchio and immediately drizzle with the vinaigrette. Garnish with parsley leaves.

Crispy skin fish almondine with cream sherry sauce and crunchy almonds
Crispy skin fish in a creamy sauce with chives and almonds. This recipe works almost with any fish, choose a chunky white fillet piece for best results. Almondine a culinary term referring to almonds, the almonds give you the added crunch and toasty nutty flavour. The fish is cooked first skin side down until crispy, once flipped it's finished by poaching in it's own sauce making it juicy. The sauce is poured on the side to keep the skin crispy and garnished with toasted flaked almonds. A fairly simple recipe that rivals fine dining restaurants, now you can do it at home. Always be cautious when flambe-ing the sherry, but if you can do it, burning off the alcohol with remove bitterness and enhance the sherry flavour. Plus it looks cool!
