How to make Jumbo tea cakes at home
Makes: 5 Jumbo tea cakes
Recipe Ingredients:
225g bread flour
113g lukewarm milk
28g caster sugar
28g white shorting chopped into pieces
56g currents
56g sultanas
28g egg beaten
28g fresh yeast
2g salt
2g vitamin C / best bread improver
14g mixed spice (best is oil) / or to your taste
For the glaze
6g hot water
7g golden syrup
For a machine with 3 speed
1. Add into mixing bowl yeast, milk, egg, sugar and whisk
2. Put the flour into the a second bowl with Salt, bread improver and soften white shorting and crumb up
3. Add the dry ingredients into the mixing with wet ingredients mix round
4. Now Mix on 1st speed for around 2 mins and then scrape down, now mix on 3rd speed for 5 mins
5. Mix spice with sultanas and currents, add then into the dough and mix for about 1 min on 1st speed, you are not to break down the fruit, this makes the dough dark and will need longer to prove up
6. Place the dough in a bowl, cover for 5mins
7. Now divide the dough into 5 pieces at about 112g
8. Make each piece into a ball, then roll out to about 3in round and then place on a greased baking tray. Cover and leave in a warm place to prove up about 45 minutes. If cold could take longer
Bake at 180°C/360°F fan oven, 200°C/400°F conventional oven for 12-15 minutes.
Prepare the glaze. You may need to heat the golden syrup slightly, mix in the water into and dissolve.
When the buns are cooked, remove them from the oven and brush them liberally with the glaze while they are still hot. Place on a wire rack to cool.
