Sticky Toffee Pudding Recipe | Date Pudding Cake Recipe
Hi friends, in this video I’m making a baked sticky toffee pudding. The traditional English toffee pudding is steamed and uses molasses in the recipe. But I’m not using molasses today. This is very easy to make and tastes delicious. The Pillowy textured cake is drenched in the butterscotch sauce and tastes excellent together. Do try this and let me know your feedback. INGREDIENTS
- 1 cup salted butter
- 1 cup sugar
- 1/2 tsp salt
- 2 tbsp corn syrup
- 6 oz semi-sweet chocolate chips
- 1 cup chopped toasted pecans
- 1 tsp vanilla extract
INSTRUCTIONS
Butter a 9×13 baking sheet pan. Set aside.
Have an instant-read thermometer ready or fit saucepan with a candy thermometer.
In a heavy-bottom four-quart saucepan, combine butter, sugar, salt, and corn syrup. Over low heat, bring to a boil, stirring slowly. Continue to boil until the mixture reached 290°F. It will be a light amber color and smell like caramel and butterscotch.
Remove from heat, add in vanilla, and pour into the prepared baking sheet pan. Let cool for one minute and sprinkle with ¼ cup chopped nuts over the entire mixture. Sprinkle with chocolate chips. Let sit until melted, about two minutes. Spread the chocolate evenly with an offset spatula. Sprinkle with remaining chopped nuts. Let cool completely, about four hours.
Once cooled completely, break into desired pieces. Store in an airtight container in a cool place for up to one month. If in a warm climate, store in the refrigerator.

Sticky Toffee Pudding | Dates Cake with Toffee Sauce | Ladies Kitchen Lab
Sticky toffee pudding which is a famous English dessert is a combination of soft and moist cake with sticky toffee sauce on top. It has got a lot of variants in Australia and other countries.
Sticky toffee pudding always confuses us wether to call it a cake or pudding. You can call it a pudding cake.
Soft and moist cake is prepared by adding soaked dates and brown sugar and either it is baked or even steam or keep in water bath. The hot cake is served with hot toffee sauce. The toffee sauce is prepared by condensing butter, dark brown sugar and heavy cream. Some people even add molasses or corn starch to speed up the thickening process. I prefer the toffee sauce without any thickening agent. While the cake is getting baked, you can make this sticky toffee sauce and pour this over the hot cake. This is a perfect winter dessert.
You can even add a scoop of vanilla ice cream or a dollop of whipping cream, garnished with some chopped nuts over the toffee sauce for making it a summer dessert too.
Tips:
1. Always use good quality dates for better result.
2. Make sure that you chopped the dates in to tiny pieces to avoid settling down while baking.
3. You can store the cake in an Air tight container for 3-4 days or in refrigerator.
4. Store toffee sauce in an air tight container and can refrigerate for 2 weeks.
