Easy No Crust Pumpkin Pie
This is the Bisquick recipe.
Use Bisquick gluten-free all-purpose flour if making a gluten-free version.
Ingredients:
2 cups pure pumpkin puree
1 cup Bisquick mix (or all-purpose flour + 2 ts. baking powder)
1 cup sugar or light brown sugar
2 cups evaporated milk
2 tb. melted butter
3 ts. pumpkin pie spice
4 large eggs
1 ts. vanilla extract
1/2 ts. salt, optional
Methods:
1. In a large bowl, beat eggs and sugar until light in color for about 3 minutes. 2. Add eggs one at a time, then add melted butter, vanilla, evaporated milk, and pumpkin puree, and mix well.
3. Add in Bisquick mix, salt, and pumpkin pie spice, and stir until combined and smooth. Pour the mixture into a greased baking pan.
4. Bake 350 deg. for 60 to 70 minutes on a 9x9 square pan or until a knife insert in the middle comes out clean. This recipe will make two 9 pie pans. Baking time is about 50-60 minutes.
5. Cool completely. Store in the fridge for 3-6 hours before cutting into squares. Serve with whipped cream, if desired.

APPLE PUMPKIN PIE WITH STREUSEL TOPPING RECIPE
INGREDIENTS
Pie Crust
1¼ cups flour
1 tbsp sugar
½ tsp kosher salt
½ cup butter, cold
1 tsp apple cider vinegar
¼ cup ice cold water
Apples
2 Granny Smith apples, peeled and diced
1 tbsp butter
2 tbsp sugar
¼ tsp cinnamon
¼ tsp ground ginger
Pumpkin Filling
2 cups pure pumpkin puree
1 ¼ cups Carnation® Evaporated Milk
3 eggs
½ cup sugar
¼ cup brown sugar
1 tbsp flour
½ tsp cinnamon
¼ tsp ground ginger
¼ tsp kosher salt
Streusel Topping
¾ cup quick-cooking oats
½ cup brown sugar
¼ cup butter, cubed
Whipped cream, for garnish if desired
DIRECTIONS
1) Preheat oven to 375ºF.
2) For the crust, in a medium bowl, combine flour, sugar and salt. Using your hands or a pastry blender, cut butter into flour mixture until it resembles coarse crumbs. Gradually drizzle apple cider vinegar and cold water over flour mixture. Toss the mixture with a fork to moisten, until the dough comes together. Gently gather dough into a ball and refrigerate for 30 minutes before rolling out.
3) On a floured work surface, roll dough out into a circle that is 1-inch larger all around than an upside-down 9-inch pie plate. Ease dough into pie plate and fold overhanging dough under itself to form a rim. Transfer to refrigerator while preparing the filling.
4) For the apples, melt butter in a large skillet over medium heat. Add apples, sugar, cinnamon and ginger. Cook until apples just begin to soften, 2-3 minutes. Cool slightly and spoon into the bottom of prepared crust.
5) For the pumpkin filling, in a large bowl, whisk pumpkin puree, Carnation Evaporated Milk, eggs, sugar, brown sugar, flour, cinnamon, ginger and salt. Pour over apple mixture. Bake in preheated oven for 40 minutes. While the pie is baking prepare the streusel topping.
6) For the streusel topping, in a medium bowl, combine oats and brown sugar. Cut in butter until crumbly. Remove pie from oven and sprinkle topping evenly over pie. Bake 22-24 minutes longer. Remove from oven and cool for 30 minutes. Refrigerate 4 hours to chill completely.
Serve and garnish with whipped cream if desired.
Serves 8-10

¼ cup graham cracker crumbs (may also use ginger snaps or digestive biscuits)
1 teaspoon granulated sugar
1 tablespoon salted butter melted
Pumpkin Pie Filling Ingredients
3 tablespoons granulated sugar
⅛ teaspoon salt
½ teaspoon ground cinnamon
⅛ teaspoon ground ginger
⅛ teaspoon ground cloves
1 large egg
¼ cup canned 100% pure pumpkin
¼ cup evaporated milk (may also use cream or regular milk)
whipped cream (optional)
INSTRUCTIONS
How To Make Graham Cracker Crust
1) Preheat oven to 350 degrees F (177 degrees C).
2) Place graham cracker crumbs in a small bowl, add sugar and stir.
3) Pour in the melted butter and stir.
4) Press crust mixture into the bottom of a greased 10-ounce ramekin. Use the bottom of a spoon to make sure the crust is pressed tight.
5) Bake crust in the oven for 8 minutes. Set aside to cool.
How To Make The Pumpkin Pie
1) Mix sugar, salt, cinnamon, ginger and cloves in a small bowl.
2) Beat the egg in a separate medium-sized bowl. Add in the pumpkin and the sugar-spice mixture and mix well. Stir in the evaporated milk.
3) Pour into the ramekin.
4) Bake for 40 minutes or until knife inserted near center comes out clean.
5) Cool on wire rack.
6) Top with whipped cream if desired
How To Make Homemade Whipped Cream
Pour ¼ cup heavy cream and 1-2 tablespoons of sugar (depending on how sweet you want it) into a small mixing bowl. Whisk just until the cream reaches soft peaks, about 2-4 minutes.
