How To make Double Peanut Butter Cookies
1 3/4 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/2 c Sugar
1/2 c Shortening
1/2 c Creamy peanut butter
1/4 c Light corn syrup
1 tb Milk
1/4 c Creamy peanut butter
Recipe by: Southern Living
Combine flour, soda, salt, and sugar; cut in shortening and 1/2 cup peanut butter with pastry blender until mixture
resembles coarse meal. Stir in corn syrup and milk. Shape dough into a 12-inch roll; wrap in wax paper, and chill at least 2 hours. Unwrap roll, and cut into 1/4-inch slices; place half of slices on ungreased cookie sheets. Spread each with 1/2 teaspoon peanut butter. Top with remaining cookie slices, and seal edges with a fork. Bake at 350 about 2 dozen. NOTE: Dough may be frozen up to 3 months. Slice dough while frozen; let thaw slightly. Assemble and bake as directed. -----

Double peanut butter cookies!
We posted our Peanut Butter cookies recipe last week on Instagram, at the request of one of our followers, The requested us to put crusted peanuts in the center of the cookie. Here's the recipe!
2 2/3 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cornstarch
1 tsp salt
1 cup (2 sticks) butter, softened not melted
1 cup granulated sugar
1 cup packed light brown sugar
1 cup peanut butter (smooth or crunchy)
2 1/2 tsp vanilla extract
2 large eggs
1/2 cup of crusted peanuts
1 tsp of sugar to sprinkle on top cookie before baking
Preheat oven to 350˚. Line a baking sheet with parchment paper; set aside.
Whisk together flour, baking powder, baking soda, cornstarch and salt in a bowl and set aside.
In an electric mixer with the paddle attachment, beat together the softened butter, granulated sugar and brown sugar on medium speed until light and fluffy about 3 minutes. Mix in peanut butter until it is incorporated and smooth. Add vanilla and eggs, one at a time, scraping the bowl down after each addition. Reduce mixer speed to low and slowly add dry ingredients until they are just incorporated and the batter is smooth, being careful not to over-mix.
Use an ice cream scoop into round balls and place on the baking sheet. Press a criss-cross pattern into each dough ball with a fork to flatten, being sure that each dough ball is at least 2 inches apart. Sprinkle crust peanuts and sugar on top and pressure peanuts into cookies. Bake for 10-15 minutes, until the edges are golden brown and the centers are slightly puffy. Remove from the oven, and then transfer the cookies to a cooling rack to cool.
