???? Scrumptious Egg Curry Recipe | Indian Egg Curry Delight
???? Ingredients:
✅ ¼ medium yellow onion, finely chopped
✅ Mixed grape tomatoes (about 1 cup), halved
✅ 1 tsp olive oil
✅ 1 garlic clove, minced
✅ Salt and black pepper to taste
✅ ¼ tsp ground coriander
✅ ¼ tsp turmeric powder
✅ ¼ tsp cumin powder
✅ ¼ tsp garam masala
✅ A pinch of cayenne pepper (adjust to your spice preference)
✅ 2 hard-boiled eggs, cooled and peeled
✅ ⅓ cup cooked brown rice
✅ Fresh parsley, chopped (for garnish)
???? Instructions :
⭕ Heat the olive oil in a skillet or frying pan over medium heat.
⭕ Add the finely chopped yellow onion and sauté until it becomes translucent and slightly browned.
⭕ Stir in the minced garlic and cook for another minute until it releases its aroma.
⭕ Add the halved mixed grape tomatoes to the pan and cook for a few minutes until they soften and release their juices.
⭕ Season the mixture with salt and black pepper to taste.
⭕ Sprinkle the ground coriander, turmeric powder, cumin powder, garam masala, and a pinch of cayenne pepper over the tomato-onion mixture. Stir well to combine all the spices with the veggies.
⭕ Gently place the hard-boiled eggs into the pan, ensuring they are coated with the tomato-onion-spice mixture. Allow them to warm through for a minute or two.
⭕ In a separate serving dish or individual bowls, place a portion of cooked brown rice.

CARROT DELIGHT RECIPE INGREDIENTS :
Milk 1 liter
Grated carrots 2 cups
China grass powder 1 tsp
Milk powder ½ cup
Water ½ cup
Vanilla custard powder 2 tbsp
Evaporated milk ½ cup
Condensed milk ½ tin
METHOD :
Bring the milk and carrot to a boil in a pan on medium heat, boil it for 10-15 mins. Place the china grass, milk powder, custard powder, water, and evaporated milk together in a bowl and whisk until well combined, then add to the milk, continue to boil for 5 mins stirring, remove from heat, stir in condensed milk to sweeten, then pour into a bowl and refrigerate, then decorate with cream and nuts.
GOANESE FISH CURRY MASALA RECIPE INGREDIENTS :
Freshly grated coconut 1 cup
Garlic 4 cloves
Ginger 1-inch piece
Kashmiri red chilies soaked and ground 4
Coriander seeds 2 tsp
Cumin seeds 1 tsp
Black peppercorns 8-10
Tamarind pulp ¼ cup
Chopped onion ½ cup
Turmeric ½ tsp
Boneless fish cubes ½ kg
Mustard seeds ½ tsp
Curry leaves 20
METHOD :
Grind together all the above masala from fresh coconut till chopped onion into a paste. Heat oil in a pan, add mustard seeds and curry leaves, fry, add the grounded masala, fry with ¼ cup water, add 2 tbsp coconut milk powder and water, cook on low flame, add fish cubes, cook till fish did for 10 mins, add chopped coriander leaves and crushed curry patta, serve with boiled rice.
