Thai Corn Fritters | Good Times With Jen
Made with red curry paste and fresh corn, these fritters are full of sweet and spicy goodness.

Ingredients:
2 ears of corn, kernels removed from cob
1 large egg
1/2 tablespoon Thai red curry paste
6 tablespoons rice flour
1/2 teaspoon salt
1 teaspoon baking powder
2 kaffir lime leaves (can substitute Thai basil leaves)
2 Thai green chilies
Canola or vegetable oil for deep frying
Sweet chili sauce for dipping
Steps:
In a food processor or small blender, combine half of the kernels, egg, curry paste, rice flour, salt and baking powder. Once fully combined, transfer to a bowl.
Thinly slice the kaffir lime leaves and chili peppers and add to the bowl, along with the rest of the corn kernels. Stir everything until well combined.
Heat oil in a wok or deep skillet to 325°F. Use a spoon to carefully drop the batter, a few tablespoons at a time. Turn over the fritters to brown on all sides. Once they are browned and floating, remove with a strainer or slotted spoon and place on a paper-towel lined plate.
Serve with Thai sweet chili sauce.

Corn Cheese Fritters
Ingredients
Boiled Corn Kernels - 1 cup (250 ml)
Onion - 1/2 cup
Chopped Garlic - 1 Tsp
Chopped Coriander Leaves
Juice of 1/2 Lemon
Maida - 1/4 cup
Salt - 1 Tsp
Pepper
Italian Seasoning - 1 Tsp
Chili Flakes - 1 Tsp
Mozzarella Cheese - 50 gms
Milk
Butter

Method
In a bowl, add the boiled corn kernels, onions, garlic, coriander leaves, lemon juice, maida, salt, pepper, italian seasoning, red chili flakes, mozzarella cheese
Mix everything well
Add some milk and combine everything together
The corn fritter mixture is ready
Heat a pan with some butter
Scoop some mixture and drop it onto the pan, press it and cook on both sides
Flip the corn fritter and cook evenly
Remove it from the pan and serve it hot

These deliciously crisp corn fritters are packed with healthy vegetables. You can make them with wheat flour or gluten-free flour as you please. We enjoy the fritters for lunch or supper, and of course they are always welcome during the cocktail hour! Ingredients are listed below:
Corn Fritters
Ingredients for 5-6 fritters (depending on size)
3/4 cup (100g) flour
1/2 teaspoon baking powder
A pinch of salt and grinds of black pepper
1 large egg, beaten
1/3 cup (80ml) whole milk
A drizzle of olive oil -- about 1 teaspoon
1 red bell pepper, diced (reserve a tablespoonful for the dipping sauce)
2 scallions, thinly sliced
A handful of chopped fresh parsley (reserve a tablespoonful for the dipping sauce)
1 (8.75 ounce) can whole kernel corn, drained and patted dry
For frying:
The oil of your choice (I used olive oil)
Dipping Sauce:
1 cup sour cream
The grated zest of a lemon
The juice of half a lemon (a tablespoon or more, to taste)
The reserved diced red pepper
The reserved chopped parsley
Salt and pepper to taste

1 cup all-purpose/plain flour (120g)
1 tsp. baking powder (5g)
1/4 tsp. salt (1g)
3 tbsp. white granulated sugar (45g) You can reduce it if you like.
1 large egg
