How To make Cold Spiced Shrimp
1/2 lb Medium-size raw shrimp
1 tb Minced fresh ginger
4 Whole green onions, finely
-chopped 1 tb Dry sherry
1 ts Salt
1 ts Szechwan peppercorns
1 1/2 c Water (more or less)
Wash unshelled shrimp, then place in a small pan. Add ginger, onion, sherry, salt and peppercorns. Barely cover with water. Bring to simmer, then cover and cook just until shrimp turn pink (about 3 to 4 minutes). Chill shrimp in stock, then shell and devein. Return to stock, cover and chill. Drain stock before serving.

Although there’s a lot to this recipe, you can cut corners by buying ready made mayonnaise and cooked prawns. But if you’re doing a dinner party, please, please, go the extra steps, it’s well worth it and doesn’t take much longer.
The secret of course is the quality of the seafood, buy the best you can afford and try and select the largest shrimp or prawns you can find. For some reason, larger shrimps are better in flavour.
You can prepare everything the day before and assemble when ready. A great, refreshing dinner party starter, everyone will love. Enjoy my shrimp or prawn cocktail.

Spicy Garlic Shrimp | Hot and Spicy Shrimp | Garlic Shrimp Recipe
1 lb whole shrimp, washed with cold water and vinegar or citrus juice
2 tsps canola oil
1/2 stick unsalted butter
Seasoning mixture:
1/4 tsp chili powder
2 tsps sweet paprika
1/4 tsp ginger powder
1/4 tsp garlic powder (optional)
1 tsp seasoned salt
1/2 tsp or more cayenne pepper
Other ingredients:
6 or more garlic cloves, finely minced
1/4 cup vegetable/seafood/chicken broth
1/2 tsp brown sugar
2 tsps extra spicy cayenne or chili based hot sauce
1 lemon, use juice as desired
1 1/2 tbsp unsalted butter
Fresh parsley for garnish

* 22 jumbo whole shrimp/prawns deveined & cleaned
* 22 garlic cloves minced
* 3 Fresno chilies chopped (adjust amount to your preference
* 4 scallions (chop white for cooking, and use green for garnish)
