How To make Coconut Apricot Haystacks
1 1/2 c Sugar
1/2 c Margarine; not diet
1/2 c Milk
1 ts Vanilla extract
1/2 c Unsweetened cocoa powder
3 1/2 c Rolled oats; quick-cooking
1/2 c Dried apricots; minced
1 c Dried coconut; shredded
1/2 c Nuts; chopped

Combine the sugar, margarine, milk and cocoa powder in a saucepan. Cook, stirring constantly, until mixture boils. Boil 30 seconds; remove from heat. Blend in remaining ingredients, using a wooden spoon to mix well. Drop by spoonfuls onto waxed paper; cool completely. Store with sheets of waxed paper between layers in an airtight container. -----

Coconut Lime Bliss Ball Recipe
RECIPE
DRY:
3 Cups of coconut flakes
1 Cup of cashew nuts
Rind of 3 limes
WET:
Juice of 4-5 limes
2 Tbs Coconut oil
2 Tbs Coconut milk
1 tsp Vanilla
2 Tbs Honey
METHOD
Use a food processor to grind the dry ingredients, mix together. Mix all wet ingredients together, stir thoroughly. Add the wet to dry ingredients, at first it wont seem like enough but after mixing with a spoon use your hands to really combine ingredients. Roll into small balls about a heaped tablespoon amount mixture, coat in coconut.
Makes around 30 balls keep refrigerated until ready to enjoy.

1/3 Cup = 1/3 Taza = 85 ml
1/2 Cup = 1/2 Taza = 125 ml
1 Cup = 1 Taza = 250 ml

Thumbprint Cookies | Preppy Kitchen
Thumbprint cookies are the original no stress ready in a snap cookie. The bright colored jam filling reminds me of Autumn leaves and Christmas ornaments. I made these with a drizzle glaze but you can use chocolate, nuts or coconut flakes just as easily. Let me know which one you prefer!
I love that these cookies can be made with little ones, as long as they have extra clean hands! Some people will use a teaspoon to press the indent into the cookie but I think it's called a thumbprint cookie for a reason. The recipe for the sugar cookie base is super versatile by the way, also great for cut out cookies!

Traditional Coconut Haystack Recipe. A quick and easy bake that is perfect for gifting.
I'm back with another bake today. This old-fashioned and traditional recipe for coconut haystacks is so lovely. It's perfect for gifting. A few on a plate or in a pretty tin makes a tasty present for someone.
The ingredients are few and it is so quick to make and bake.
Ingredients as follows;
2.5 cups of Desiccated Coconut
3/4 cup of Caster Sugar
2 tbsp Self-Raising Flour
1/2 tsp Vanilla
1 Large Egg
1/4 cup of Milk
Glace Cherries to put on top
Put all the ingredients into a bowl and mix well.
Make into balls with wet hands, or press into a wetted mould. Arrange on a non stick tray or paper and decorate with a piece of cherry.
Bake at Gas 4, 180 deg c (160 deg fan) for 20 -25 mins. until golden.
