How to Make Cinnamon Chicken / Recipe in One Pot (with Carrots, Chickpeas and spices)
Easy to prepare One Pot Chicken Rice with Carrots Chickpeas and Cinnamon
This easy to cook delicious and nutritious dish is prepared and cooked under 30 minutes and 5-6 persons and it is full of flavour and texture.
Preparation is easy as it is all cooked in one pot. This means there is less washing up to do.
All you need to prepare is the carrots which you cut into juliens or thin strips, the chicken breast sliced and then cut into thin strips, 1 medium sized onion chopped.
The rest of the ingredients are ready packed or tinned.
Ingredients:
300g of Long grain white rice
1 Tin of cooked chickpeas
200g of carrots
100g of Chicken breast (you could increase the chicken amount if you prefer)
1 Medium sized Onion
2 teaspoon cinnamon, 1 teaspoon black pepper and 1 tsp salt.
100 ml Chicken stock
Method
Fry the chopped onions until tender and translucent
Add the strips of chicken and fry for a few minutes until lightly cooked.
Then add the carrots and mix well frying for a minute or so to release its flavours.
Add the washed and drained chickpeas that need no cooking , add the cinnamon and salt and pepper and mix well.
Add the rice on top of the mixture and then add chicken stock just covering the rice.
Simmer on medium heat for 20 minutes until the rice is cooked and the stock is absorbed.
When cooked cover the pan with a large flat dish and turn over. If you do not want to turn over the pan mix all the ingredients in the pan before serving.
Serve a portion onto a plate and sprinkle with chopped parsley.

Ingredients:
Chicken
1½ lb boneless & skinless chicken thighs, cut into large chunks
1 egg white
½ cup all-purpose flour
⅓ cup cornstarch
Vegetable oil for frying, roughly 5-8 cups
Salt & ground black pepper to season
Orange Cinnamon Glaze:
½ cup soy sauce
½ cup distilled white vinegar
1 tbsp minced ginger
1 tbsp minced garlic
1 tsp chili flakes
1 tbsp cornstarch dissolved in 1 tbsp water
4 tbsp honey
2 tsp ground cinnamon
Zest and juice from 1 orange
orange segments from 1 orange, preferably seedless
Salt & ground black pepper to taste
To Serve:
Roughly 1 oz orange segments per serving
1 cup rice per serving
For Garnish:
¼ tsp green onions per serving

0:11 In a large mixing bowl, add the chicken thighs, egg white, flour, and cornstarch.
0:26 Season with salt and pepper, then toss to coat evenly. Set aside.
0:42 Prepare your oil ready for deep frying, and a basket lined with paper towels.
0:47 Deep fry your chicken in batches, then drain them into your lined basket. Set aside in a warm area.
1:01 In a saucepot, combine soy sauce, vinegar, ginger, garlic, chili flakes, and orange juice. Bring to a boil.
1:30 Reduce to a simmer and continue simmering until reduced by ¼ its original content, roughly 5 to 7 minutes.
1:38 Add the cornstarch slurry, stir to combine and simmer briefly until there is no starchy taste, roughly 5 to 7 minutes.
1:50 Add honey, ground cinnamon, orange zest, and fried chicken. Stir to combine.
2:18 Season to taste with salt and pepper. Adjust accordingly, then add half of your orange segments. Toss until all are coated evenly.
