***Excerpt from "Square Meals": "No one who loves to eat can visit Cincinnati without falling in love with the most eccentric and delicious noodle dish of all--5-Way Chili. Invented by Greek immigrants in the 1920s, it is unique to southern Ohio, and served only
in chili parlors, most of which are fluorescent-lighted luncheonettes that haven't changed much since 1950. Nobody in Cincinnati gives out their recipe. It is a dish of startling complexity, so dizzingly spicy..." THIS IS A 2 PART RECIPE. Salt a large cast iron skillet. Turn heat to med and add meat, onions, and garlic. Cook until meat is browned. Add tomato sauce, catsup, water, and vinegar. As mixture begins to boil, add everything else. Adjust spices to taste, adding more salt if it needs perking up, turmeric and cumin for a sweatier chili flavor, cinnamon, cloves, and mace if you want it sweeter, cardamom for more bang, unsweetened chocolate for body. Cover and simmer at very low heat for about 1 hr, stirring and tasting occasionally, adding tomato juice if it is getting too dry to ladle up easily. -----

Let's make Cincinnati Chili!
I'm making Cincinnati Chili from scratch, it's easy peasy and I'll show you how and leave the recipe for you as well!
Cincinnati Chili
4lbs ground beef
1 large onion, diced
½ cup chili powder
2 tsp cinnamon
2 tsp cumin
½ tsp allspice
½ tsp cloves
(1) 1 ounce square of unsweetened chocolate
42 oz beef broth
30oz tomato sauce
¼ cup Apple cider vinegar
2 bay leaves
½ tsp cayenne pepper
Brown meat in batches in a heavy stock pot or dutch oven (at least 10qt)until it is all browned, add onion and let it cook for a couple minutes. Add spices and chocolate and stir it in real well. Add the beef broth, tomato sauce, vinegar and cayenne pepper, stir well. Add the bay leaves. Bring chili to a boil then turn the heat all the way down to a simmer and let it simmer for 2-3 hours.
A half an hour before it’s ready to eat, boil up some spaghetti noodles. Drain them when done. Serve the chili over some spaghetti along with cheddar cheese, onions, sour cream and don’t forget the Frito’s---that’s the most important part!
Enjoy!!

Cincinnati Chili Recipe - Chili is a dish that has literally 100’s of different recipes. They vary by region, ethnicity, chili color, ingredients, and intangibles such as what to serve with your favorite type of chili. There are multiple Chili cook-offs in every city every year. Nothing says comfort food in the US more than Chili.
One of the most unique types of Chili is Cincinnati-style Chili. For those who grew up in Cincinnati or lived there for any significant length of time, you can’t help but take sides in the Skyline Chili ( vs Gold Star Chili ( debate. There are as many Skyline/Gold Star locations in Cincinnati as there are McDonald’s. They all have a drive-thru, just like McDonald’s.
This is not a true Cincinnati chili recipe because 1) I use ground Turkey and 2) I don't boil the meat. But the flavor palate is there. So if you can't get to a drive-thru in Cincinnati, try this recipe for a tasty alternative to Cincinnati Chili.
